Add the soya protein and cook for a further 5 minutes, stirring all the time. Add the tomatoes, oregano and soya sauce and simmer for 10 minutes. Season if required. Any history of vegetarianism would be incomplete without mentioning the contribution made QUICK AND EASY SPAGHETTI BOLOGNESE Method. Heat the oil in a frying pan, add the onion, carrot, celery and garlic, and cook over a moderate heat for about 5 minutes until the vegetables have softened. Add the mushrooms and continue to fry for 2-3 minutes. Pour the chopped tomatoes into the pan SOYA MINCE AND VEGETABLE LASAGNE Fry the vegetables in a little oil until softened. Add the soya protein and cook for a further 5 minutes, stirring all the time. Add the tomatoes, oregano and soya sauce and simmer for 10 minutes. Season if required. Make the sauce by melting the margarine in a pan and stirring in the cornflour. Cook for 2VITAMIN B12

B12 consists of a small group of compounds called the cobalamins and is important for healthy blood and growth, child development, and also helps to keep the eyes, brain and nervous system functioning normally. B12 is synthesised in nature by micro-organisms. IODINE | THE VEGETARIAN SOCIETY Iodine is needed for thyroid hormones to work properly. Thyroid hormones affect the speed you burn calories and grow, heart and digestive functions and muscle control. If you have a medical condition and would benefit from specialist dietary advice, the Vegetarian Society has a LEBANESE STYLE COTTAGE PIE Method. Put a large pan of water on to boil. Place the sweet potatoes into the pan and simmer for 15 minutes or until soft. When done, drain in a colander and leave to one side. While the potatoes are cooking, start making the filling. Heat half the vegetable oil in a saucepan and gently fry the onions for 5 minutes until softened. ANNE’S MUSHROOM STROGANOFF Add the vegetable stock and chillies to the frying pan. Cook for 7 minutes, until about half of the liquid has reduced. Whilst the stroganoff is cooking, begin to cook the rice according to packet instructions. Add the cream and a generous amount of pepper to the stroganoff, then simmer for approximately 5 minutes, stirringfrequently.

Place the water, salt and lemon in to a pan and add the tofu. Bring to the boil then simmer for 10 minutes. This will add firmnessto the tofu.
