DINING WITH THE DOC: THE PERFECT OVEN-ROASTED VEGETABLES One of my favorite ways to eat vegetables is to roast them in the oven. Roasting vegetables at a high temperature caramelizes their sugars and brings out their natural sweetness. As the vegetables roast, they brown on the outside, become buttery soft on the inside and their flavors intensify. I usually make a couple of large trays of them and store them in the refrigerator so that I can snack DINING WITH THE DOC: ULTIMATE CHILAQUILES If you’ve never heard of chilaquiles, it’s a common Mexican dish that’s usually served at breakfast or brunch. DINING WITH THE DOC: FETA SHRIMP SKILLET Instructions. In a large nonstick skillet, heat oil over medium-high heat. Add onion; cook and stir 4-6 minutes or until tender. Add garlic and seasonings; cook 1 minute longer. Stir in tomatoes and, if desired, wine. Bring to a boil. Reduce heat; simmer, uncovered, 5-7 minutes or until sauce is slightly thickened. DINING WITH THE DOC: SHRIMP BIRIYANI Place the rice, ¼ teaspoon salt and 2 cups water in a medium saucepan and bring to a boil. DINING WITH THE DOC: THE PERFECT OVEN-ROASTED VEGETABLES One of my favorite ways to eat vegetables is to roast them in the oven. Roasting vegetables at a high temperature caramelizes their sugars and brings out their natural sweetness. As the vegetables roast, they brown on the outside, become buttery soft on the inside and their flavors intensify. COOK ONCE, EAT TWICE: CHICKEN TERIYAKI I’m so excited about this months Recipe Redux theme, which is “Two for One.” It fits right in with the “Cook Once, Eat Twice” series on my blog, where I show you how to make a delicious and healthy recipe and then transform the leftovers into a completely different dish the next day. It’s a real timesaver in the kitchen, especially on busy weeknights.CAULIFLOWER POLENTA

TURKEY STUFFED ZUCCHINI BOATS My Turkey Stuffed Zucchini Boats are light and nutritious- they’re the perfect dish to kick off the New Year in a positive way! Now that the holiday season is over, I’m definitely ready to start the New Year with some healthy eating choices. DINING WITH THE DOC: SHRIMP BIRIYANI Place the rice, ¼ teaspoon salt and 2 cups water in a medium saucepan and bring to a boil. Reduce to a simmer, cover and cook 10-12 minutes until rice is about halfway cooked. Remove from heat. Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, until golden, about 10 minutes. INGREDIENT 911: KALE, A SUPERFOOD Remove the stems and ribs, then cut or tear the leaves into large pieces. Toss the kale pieces in a large bowl with the olive oil and mix with your hands to make sure all of the pieces are coated. Season with salt. For my Slow Cooker Jackfruit Tacos, I decided to cook the jackfruit in a slow cooker along with smoky chipotles in adobo, cumin, oregano, and fire roasted tomatoes to infuse them with plenty of rich flavor.
