RECIPE: DRUNKEN ONIONS 1 T dark brown sugar. Directions. Divide the onions evenly into 2 foil packets, separating the rings as you go. In a small bowl, stir together the melted butter, ginger, and bourbon. Pour the mixture over the onions, then season with salt and pepper, and sprinkle brown sugaron top.

Followed by cupcakes with his fellow summer campers later this morning. Followed by take-out lunch from Panera (his choice). RECIPE: ASIAN INSPIRED BABY BOK CHOY AND PORTOBELLO MUSHROOMS Stir to ensure mushrooms are coated with oil, add salt and pepper. Cook for 2-3 minutes or until mushrooms begin to brown and caramelize. Reduce heat and add garlic and Braggs amino. Cook for another 1-2 minutes, add the bok choy to the pan, mix to combine. Put on serving plate and garnish with scallions. Yield: 2-3 servings. VISIT: CROSS ESTATE GARDENS {BERNARDSVILLE, NEW JERSEY} Lovingly maintained by volunteers, this is one of those places that would be wonderful to visit every season so you can see the various scenes play out in the gardens. The house on the property was originally built in 1905 as a country escape, and the estate also features a carriage house, water tower, and gate house. CHRISTMAS BAKING: ESPRESSO DELIGHTS Yup, ’tis the season. The baking bonanza officially kicked off this past weekend, and these Espresso Delights were the beauty of the bunch. As soon as I pulled them from the oven, the kitchen instantly smelled like espresso. Peel and finely grate of shred the carrots, ginger and red onions and put them into a large bowl. Finely chop the chilies and add to bowl. Roughly chop the cilantro leaves and stalks. Add the mustard seeds, tumeric, cumin seeds, salt and chopped cilantroto the bowl.

RECIPE: ASIAN INSPIRED BABY BOK CHOY AND PORTOBELLO MUSHROOMS Stir to ensure mushrooms are coated with oil, add salt and pepper. Cook for 2-3 minutes or until mushrooms begin to brown and caramelize. Reduce heat and add garlic and Braggs amino. Cook for another 1-2 minutes, add the bok choy to the pan, mix to combine. Put on serving plate and garnish with scallions. Yield: 2-3 servings. RECIPE: HEARTY TURKEY CHILI {WEIGHT WATCHERS} Coat a large pot with cooking spray; place over medium heat. Add oil and onion; sauté onion until soft, about 5 to 7 minutes. Add garlic and carrots; cook until garlic is softened, about 1 minute. Place 2 cups tomatoes in an 8x8x2″ glass baking dish. Stir in 1 Tbsp. oil and a large pinch of salt. VISIT: LAURELWOOD ARBORETUM, WAYNE, NEW JERSEY by Cate on May 18, 2020 _A quiet little oasis tucked away in Wayne, New Jersey, let’s visit the Laurelwood Arboretum ._ Since the Coronavirus pandemic hit, and we’ve been quarantined, I’ve made an effort to get my kids out of the house for an hour or two of family time in the fresh air and sunshine. While the rest of the time they have been largely sequestered at home, I feel the shot of fresh air and sunshine is much needed for positive mental health. They don’t necessarily agree, but they humor me and we compromise and stick to destinations that are within a twenty minute drive and largely isolated, to keep everyone safe. And that’s how we ended up at the Laurelwood Arboretum. I am a sucker for a peaceful place where I can listen to the water trickle in a stream and take a slew of floral and fauna photos, so you know this checked all my boxes. We found it easily, and pulled into the small parking lot. Since the state is still largely on lockdown, the Visitor’s Center is closed (along with the restrooms), so if you visit before things open up,keep that in mind.
We wandered aimlessly, following the trails in a large loop, and the place is such a meditative and reflective spot, I could have happily stayed for hours. It’s quiet, with little benches and bursts of flowers tucked in here and there, along with a few sculptures, and babbling streams. I stopped at every one, as my kids made fun of me, because trickling water or the sounds of the beach are legit my favorite sounds ever.Print it!
