Lemongrass Chicken Salad with Chilli Dipping Sauce and Somen Noodles SOBA - HAKUBAKU - THE KOKUMOTSU COMPANY Soba noodles are thin, brown to grey, Japanese noodles made of wheat and buckwheat flour. They are roughly as thick as Italian spaghetti, and are used in various hot and cold dishes. Soba can be served with various toppings, hot in a soup broth or chilled, and served with a dipping sauce, scallions and wasabi. CHILLI GINGER UDON NOODLES 1. Bring onions, garlic and shallots to the fry pan. A small amount of coconut oil is best to fry with. 2. While they are cooking, add Hakubaku Udon noodles to a pot of rapidly boiling water. Boil for 8 minutes. 3. Add mushrooms, broccoli, and chopped capsicum to the onion mix. Stir in fresh ginger. MISO RAMEN - HAKUBAKU - THE KOKUMOTSU COMPANY Slice your hard-boiled eggs. Cut bok choy leaves in half lengthwise. Prepare Hakubaku ramen noodles as per the packet instructions. Arrange servings of Hakubaku ramen noodles, chicken slices, egg, carrot, cucumber, bok choy, shallots, chilli and egg in two bowls. In Japan, 100% buckwheat noodles are called Jyuwari (or Towari) Soba and contain 100% buckwheat. We don't make Jyuwari Soba. We make Soba which is authentically buckwheat and wheat. We use the alternate meaning of 'soba' (buckwheat) for the English name as asubtitle.
CHA SOBA - HAKUBAKU - THE KOKUMOTSU COMPANY Cha Soba noodles are thin Japanese noodles made from wheat flour with Cha (green tea) powder and buckwheat flour. In Japan, Cha Soba is considered a delicacy and is only consumed on very special occasions. The green tea flavour does not suit some dishes.
