FUSS FREE COOKING

Finely chop garlic. Heat up a tablespoon of oil in a pan over medium flame. Add garlic and chilli flakes when the oil is hot and saute until the garlic becomes aromatic. Add the leftover vegetable stir fry and saute until well heated through. Add a teaspoon of concentrated chicken stock (if using) and toss gently with the veggies. Then in the rice cooker add 5 cups of water, turmeric powder and a teaspoon of salt. Turn on the rice cooker and allow the rice to cook. In the meantime, start prepping the ingredients i.e. slicing the onions, dicing the tomatoes and chicken. MAKE YOUR OWN KECAP MANIS (INDONESIAN SWEET SOY SAUCE Indonesian sweet soy sauce aka kecap manis is one of my most used sauces besides soy sauce and oyster sauce. OLIVE OIL SHORTCRUST PASTRY Method:-. In a mixing bowl, mix together flour and salt. Then add in olive oil using a fork until resembles breadcrumbs. Gradually stir in cold water (about 1/4 cup as a guide as it may vary) until the mixture forms a dough. Wrap the dough in cling wrap and CHINESE GINGER & LEEK CHICKEN STIR FRY Instructions. Combine chicken, soy sauce, Indonesian sweet sauce, ground white pepper and sesame oil in a glass or ceramic bowl. Toss to combine. Refrigerate, covered, for at least 30 minutes or, if time permits. In the meantime, prep the ginger, leek and carrots. Mix all the sauce ingredients in a measuring jug and set aside.STOVETOP PIZZA
Methods:-. In a 20cm/8-inched non-stick frying pan, mix together the flour, oil with 2/3 cup water and a good pinch of salt with a spatula (I used a wooden spoon). The dough will appear very sticky, simply work it around the bottom of the pan to form a nice dough. CHICKEN BIRYANI (USING A RICE COOKER) Method:-. GRILLED LIME AND SWEET CHILLI SALMON Preheat oven to 180 degrees Celsius (356 Fahrenheit). Line aluminum foil followed by a baking paper on a baking tray. Set aside. In a mixing bowl add sweet chilli sauce, garlic, lime rind and light soy sauce. Whisk until well combined with a fork. WEEKEND COOKING: SLOW COOKER + READY MADE CURRY SAUCE What’ll you need for 4 servings (pretty generously):-. 375g (13 ounces) simmer curry sauce of your choice*. 1kg (35 ounces) chicken thigh fillets. 135ml (4.5) light coconut milk (I used half of the 270ml Ayam brand light coconut milk) A slow cooker (mine is the Sunbeam brand from Big W) and cooking time: 4 hours. SWEET POTATO CRACKERS Mash until smooth. Mix the mash with milk. Set aside. In a food processor, add flour, baking powder, salt, butter. Process until resembles breadcrumbs. Add sweet potato into flour mixture. Process until it forms a dough. On the floured surface, knead the dough (about 80 turns). Divide dough into 4 pieces and roll each very thin. BEEF MINCE CURRY & INDIAN FRIED BREADS (POORI) 2. Add the ginger garlic paste and spices (turmeric, coriander powder, cumin powder, chilli powder & garam masala) to the onion mixture and fry till aromatic, over low heat. (If the spices to stick to the post, add a little water, say about 1 tbsp or so.) 3. Then add the remaining ingredients (mince beef, tomato paste, green chilli and frozenSWEET CHILLI PRAWNS

While roasting chicken on a pan will always has a special place in my heart, I am excited to share with you French (Dutch) oven roast chicken is a recent and delicious addition to my repertoire. I got this OVEN BAKED CORN FRITTERS Look, it’s a muffin, it’s a quiche. No it’s a corn fritter! Lighter version and less doughy. Normally, you shallow fry corn fritters on a pan which gives a much crispier and greasier result. Yumz!! I personally find it is manageable to shallow fry for two people portions but when you want to cater for CHEAT'S TANDOORI CHICKEN If you enjoy eating Tandoori chicken at Indian restaurants, this cheat’s tandoori chicken recipe is a must-try at home! Marination time aside, preparation as well as cooking time for this recipe can all be done in under 30 minutes! And we are not using ready-madetandoori

Instead of bread dough, the pizza crust is made of mince beef. I watched an episode of Nigellissma on Youtube where Ms Lawson made a meatzza. Even though this stuff tastes pretty good in GRILLED LIME AND SWEET CHILLI SALMON This grilled lime and sweet chilli salmon is the ULTIMATE FUSS FREE COOKING meal (a big call, I know). It is one of my all-time favourite under 30 minutes meals and with only FIVE INGREDIENTS! These beautifully blistered sweet and sticky salmon portions are to die for especially when paired with brown rice and cooked CHICKEN BIRYANI (USING A RICE COOKER) Biryani is not an ordinary one-pot rice dish. It’s rich in spices coupled with beautiful fresh herbs, toasted nuts and raisins, thus making this a meal fit for the kings, literally. It is believed that this was created in the kitchens of Mughal Emperors. Nowadays, this popular Indian sub continental dish is a party favourite. OLIVE OIL SHORTCRUST PASTRY Olive Oil Shortcrust Pastry (tweaked slightly on Italy in Small Bites by Carol Field). What you’ll need to fill a 20cm (8 inched) tart pan:-200g (7 ounces) all-purpose flour + WEEKEND COOKING: SLOW COOKER + READY MADE CURRY SAUCE Slow cooker (aka crock-pot) was an amazing find for me last year. CHINESE GINGER & LEEK CHICKEN STIR FRY This is my teeny tiny twist to my favourite dish from Chinese takeaway – the ginger & spring onion (scallion) chicken stir fry, which I have substituted the spring onions with a leek. This batch of stir fry was a generous one in terms of portion size. This came about when there were discounted chicken SWEET POTATO CRACKERS Crackers are one of my snack staples besides cookies and PB&J sandwich. Since I missed the whole oreos-dunked- in-milk action for the most part of my childhood, besides having Nestum cereal in milk, the next best thing I had was dunking plain crackers. I think growing up on an island has something to do with my love of seafood. My mum used to get seafood directly from the local fishermens because it’s cheaper and most importantly, fresher.
