We set the stage with a balloon backdrop and decorated the high chairs with a burlap sign and fabric garland. KAUAI TRIP WRAP UP: THE FINAL DAY(S) Friday morning started off lovely. We had breakfast at another local spot, the Kountry Kitchen. We had to wait in line for nearly an hour to get a table, but the food was generously portioned and delicious. Totally worth the wait! We said goodbye to two of our friends before their flight and headed out to a flight of our own. We were determined to see the Na’pali Coast – after the boat debacle – and as luck would have it, we won a discounted ticket to a helicopter tour of the island. Sunshine Helicopters took us on a great, 55-minute tour of the island, seeing so many of the sights that we’d been to that week from the air. And I finally got to seeNa’pali.
I have to admit, I was terrified of helicopters and would probably never do this again, but I had a wonderful time. The views were absolutely spectacular, our pilot was first-rate and the experience was stunning all around. Again, that pesky wind and rain made the ride a bit bumpy, so my stomach was in knots for part of it, but it was a great experience, all in all. That evening, we found another little shopping center in Kapaa to walk around and have a lovely dinner. The restaurant was connected to a hotel, so after a lovely dinner, we snuck around their grounds forsome cute pictures.
Our flight was at 11pm, so we headed to the airport, exhausted after a long week and ready to go home. But alas, it was not to be. About 30 minutes prior to our boarding time, we heard the words no traveler wants to hear, “I’m sorry but this flight has been cancelled.” At 10pm, this was horrible. We spent the next hour on hold with American Airlines trying to switch our flights and simultaneously trying to call our friends back at the hotel to come back for us. With them passed out from exhaustion, we took the free hotel voucher offered by the airline and Ubered over to a local establishment for some sleep. Saturday morning we finally got ahold of our friends and met back up for another half day of sightseeing. With our flight leaving at 11 but theirs leaving at 3, we had some time to kill. We went back down to Poipu and found another little area with shops and restaurants to have lunch and walk around. I wish we’d found this place earlier since the shops were super cute and the restaurants were great, so I’m glad we made it back. We weren’t able to extend the rental car time, so our friends dropped us off at the Koloa Rum Company before heading out to their flight. We had a rum tasting and walked around the grounds before Ubering over to the only movie theater on the island to watch the Lego Movie 2. Not the best way to cap off our vacation, but when you’ve got 8 hours to kill, you do what you can. We finally headed back to the airport after the movie and made it on our flight (though it was delayed – thanks again, American Airlines!). We had a layover at LAX and our flight was due to leave at 10. As you are reading this, you can probably guess where this story is going. So that flight got delayed to 11:30. And then to 1:30. And then indefinitely. At that point, we decided to get off this crazy train and got on another flight that was bound for home at 4:30. We made it back home around midnight to discover that one of our bags was left in LA and the original flight was cancelled. So a full 30 hours after we were supposed to be home, we finally made it, thankfullymoving our flights.
Though the return trip was horrendous, this really was a trip of a lifetime. I was so thankful we were able to experience this with dearfriends.

KAUAI WRAP UP PART 2 After a quick change from the zip line, we headed down towards Lihue for a traditional luau! I wasn’t entirely sure what to expect, but with all you could eat and drink, we were ready to party. The show was more like dinner theater, with the story dramatizing the discovery of Hawaii. We were all really impressed. Wednesday saw us heading down towards the south of the island to the Poipu area. We had lunch at a local shopping area but then headed towards the marina for our sunset cruise. The boat tour was supposed to take us along the Na’pali Coast (west side of the island), however with the rough surf from the high winds, the captain warned us we weren’t guaranteed to see it. Nevertheless, we shipped out to smooth waters, seeing dolphins and even a hint of some whales. I’m on a boat, look at me! As we got farther up the coast, the water started to get a little rough and the passengers (our group included) started to feel a little sea sick. Luckily, our group was the first to start feeling sick, so we were able to post up at the prime sea sickness spot to ride out the balance of the trip. We didn’t get to dinner (again, sea sickness) but once we started heading back to the marina, the seas calmed down and we were able to enjoy ourselves again. We were even able to toast to the sunset with a little glass of champagne. After the cruise, we headed over to the Kauai Brewing Company, which is just next to the marina. Since most of us didn’t eat dinner, we grabbed a quick bite and some beers. Since we didn’t have any tours planned for Thursday, we decided to head back to the west side of the island again to see Waimea Canyon. Though it took about an hour and a half from Kapaa, this was worth the drive. With the weather still being dicey, we weren’t able to see much from the trail heads at the top of the canyon, but the scenic overlooks that lined the drive up were more than enough for us. That night being Valentine’s Day, we had reservations at a local restaurant, Sam’s Ocean View. They had a special Valentine’s Day menu which was absolutely delicious. Since two of our friends were headed home Friday afternoon, and hubby and I were headed home Friday evening, this was our last dinner together and it was fantastic. KAUAI TRIP WRAP UP PART ONE I never thought I’d make it to Hawaii. The plane ride alone was enough to deter me. But when an old college friend suggested a reunion vacation to Kauai (The Garden Island), hubby and I jumped at thechance.
After a total of 11.5 hours on a plane, we finally made it to Kauai! Even from the plane landing, I knew this island was going to be one of the most beautiful places I’d ever seen. We stayed in an area of Kauai called Kaapa, which is on the eastern part of the island, north of the airport. This turned out to be a perfect spot to stay. We were within walking distance to plenty of shops, restaurants and coffee houses – not to mention the beach. Quaint shops in Kaapa Our first stop after getting settled in was a local restaurant aptlynamed, The Local.
Sunday was our first full day and we chose to explore more of Kapaa while we waited for another couple to arrive on the island. Kapaa had such a great collection of shops and restaurants. We spent most of the day ducking between stores as the weather ended up getting a little crazy. Winds were up to 45 mph at times and the rain poured on and offmost of the day.
High winds near the beach The weather ended up being a big part of our trip as the high winds and high surf warnings deterred some of our planned activities. We had initially planned a tour of local chocolate farm for Monday, but we were cancelled due to the wind damage sustained by the farm. Instead of the chocolate tour, we traveled to the north part of the island towards Hanalei Bay and Princeville. We stopped at some more shops and restaurants on our way to Hanalei Bay. The highlight of the trip, however, was absolutely the bay itself. The beach was gorgeous, and even with some winds and a high surf warning, the day was gorgeous. On our way back, we stopped at a couple scenic lookouts before heading out to Waimea Falls. This was an absolute gorgeousscene.
A beach lookout on our way to Hanalei Quick stop at the Kilauea Lighthouse Hanalei Bay On Tuesday, we headed back up to Princeville to the Princeville Ranch for their Zip N Dip tour. The tour consisted of about 9 zip lines, split in the middle by a lunch break swim in a waterfall pool on site. I’d never gone ziplining before, so I was anxious to try it. Our guides were amazing and the views were incredible. I had the absolute best time. One minor snafu during the swimming portion – I managed to lose my Apple watch at the bottom of the pool. Jumping into the pool, I didn’t consider that perhaps the force of the water would compromise the band. Though I was so upset (you all know my attachment to my watch), I didn’t let this ruin our trip. I still maintained that I love this part of the adventure. Up next – our evening trip to the luau and a boat tour! by Jess - February 12, 2019January 29, 2019 SHRIMP LETTUCE WRAP TACOS In our house, we serve tacos. If it hasn’t already been abundantly clear, we take Taco Tuesday very seriously in our home. Since we’ve been going low carb, however, my husband and I have been finding healthy swaps where we can, without sacrificing flavor. Lettuce wraps have been where it’s at. Sure, it’s an adjustment to go from a flour tortilla to the lettuce, but the fun lies in the fixin’s. I load everything down with pico de gallo, guacamole, Greek yogurt (sub for sour cream and cheese and honestly, I don’t even miss the tortilla.Ingredients
Head of lettuce (I use Iceberg)1 lb. shrimp
1 tsp garlic salt
1 tsp. Cumin
tsp. Paprika
tsp. Pepper
1 tbsp olive oil
Optional toppings:
Avocado
Guacamole
Cilantro
Mexican cheese
Greek Yogurt/Sour Cream Pico de Gallo or favorite salsa Start by heating a skillet with the olive oil. Put shrimp in bowl and add spices. Toss to combine. Once skillet is nice and hot, add on the shrimp and saute until cooked through or heated. I typically use precooked shrimp, so I just make sure we’re completely heated. While you wait, unwrap your lettuce “shells” in preparation for the shrimp. Once shrimp is ready, divide evenly between the shells and top with desired toppings. Enjoy! This very simple recipe is great for busy weeknights. As a bonus, it can be served deconstructed style for picky toddlers (like ours) who may not like all the toppings, but still want to participate in themeal.

Monday – General Tso’s Chicken Thighs Love LOVE General Tso’s chicken, but don’t like the calorie punch that comes with it. Excited to try this baked version with the cauliflower rice to keep it a little low carb. Tuesday – Turkey Squash Toss Another easy one for weeknights and I can’t stress how delightful this one is. It’s a real comfort food without being too heavy – perfect for a healthy winter meal. Wednesday – Stuffed Chicken Breast I’m serving this one with a side of asparagus, but it’s packed with healthy spinach and yummy cheese to keep you full. Thursday – Ground Beef Taco Salad Easy to throw together in the evenings, this recipe will soon become a staple around your house – just like it has in mine! Hopefully wherever you are is warmer than here in Ohio! I’m headed for warmer climes soon, so don’t feel too bad. Enjoy your weekend! by Jess - February 5, 2019January 29, 2019 TURKEY, SQUASH AND BRUSSEL SPROUT TOSS Brussel sprouts have become a staple in our house. Especially delicious in fall and winter, these puppies are a hit with my husband and my toddlers alike. Roasted with some garlic and varied seasonings, you really can’t go wrong. In an effort to go through some random squash we had acquired this fall, I found a delicious appetizer that combined brussels with squash, but I added some turkey as a protein to make it more of a complete meal.Ingredients
1 lb Turkey breast
1 medium butternut squash, peeled, seeds removed and then chopped 1 lb brussel sprouts, quartered1 tsp garlic salt
1 tsp rosemary
tsp. Pepper
2 tbsp olive oil, divided tbsp balsamic vinegar Preheat oven to 400 degrees. Toss squash and brussel sprouts in a bowl with 1 tbsp olive oil and spices. Roast in oven for approximately 30 minutes, or until crispy and tender. While waiting, slice up turkey breast into bite size pieces. Once veggies are done, combine in a bowl with turkey and toss together with olive oil andvinegar – enjoy!

I can’t believe we’re through January already! 1/12 down with 2019. We’ll be talking about summer soon, at this rate. We’re headed to Hawaii in a few weeks with some couple friends, so I’m getting my last few healthy dinners in. Here’s my weekly dinner plan for this week – everything is quick and easy and perfect forbusy families!
Monday – Cauliflower Gnocchi with Spinach and Mushrooms This one really can’t get any easier, that’s why I love it for Meatless Mondays. Follow my recipeor
simply create your own on the fly! Just be sure to saute your cauliflower until crispy (don’t follow the instructions on thepacket).
Tuesday – Spaghetti Squash with Chicken Sausage This is another quick and easy winner. Always easy to throw together in a rush, it’s a weeknight saver. Wednesday – Buffalo Chicken Sweet Potato Nachos I make a variation of this with leftover buffalo chicken from our keto pizza days, but starting off with the slow cooker for this chicken isGENIUS.
Thursday – Mushroom Cauliflower Rice I know this is another meatless recipe, but I’m really excited about this one. My kids aren’t the world’s biggest mushroom fans, but they LOVE cauliflower. Can’t wait to try this one! Winter activities are really starting to pick up this month and next, so quick and easy is really the name of the game for the next few weeks – I’m sure you can relate!
