Welcome to My Homestead. I’m just a plain country girl who loves playing in the dirt, stuffing food into Mason jars (after I wash my hands of course), and hunting down as many traditional old-fashioned skills as I can to put into use on our homestead. We live on 14.96 acres in the foothills of the North Cascade mountain range ofWashington state.

Forget the buttermilk substitutes made with vinegar or lemon juice, this is the real deal and is the best to use in baking as it results in much lighter and fluffier baked goods. CHERRY PIE FILLING RECIPE (CANNING INSTRUCTIONS) Instructions. If using fresh cherries, put 6 cups at a time in 1 gallon boiling water and boil for 1 minute. Drain and process next batch of cherries. Keep boiled cherries in a bowl or pot with lid to keep warm. For frozen cherries: In a colander over a large bowl, drain thawed cherries until you have 4 cups or more cherry juice (you canuse
ULTIMATE GUIDE TO FERMENTED VEGETABLES: WHAT YOU NEED TO KNOW Filtered water – when making fermented vegetables, it's important to try and use as pure water as possible. Any chlorine, fluoride, or other mysterious items found in tap water need to be avoided at all costs. Pure sea salt – You'll want to also use pure sea salt. 7 TIPS FOR CRUNCHY PICKLES EVERY TIME 6. Use whole cucumbers. Chips and spears are fun, but truthfully, when using a water bath canner for shelf-stable pickles, the whole cucumbers are the crunchiest. You can slice them into spears or rounds at the time of eating. I still do spears and chips but have noticed they're not as crunchy as whole cucumbers. 7. PICKLED ASPARAGUS RECIPE (CANNED, QUICK, OR REFRIGERATOR) Set lids in a pan of water on medium low heat until ready to seal jars. Put water, vinegar, sugar, salt and celery seed in a large pot and bring to a boil, stirring occasionally. Once liquid has boiled, fill each jar to the top of the spears, leaving 1/2 inch head space. Wipe rims, put on lids, and screw on bands. GRANDMOTHER’S DATE BREAD RECIPE: VINTAGE RECIPE Grandma's date bread recipe was born during war rationing, when sugar was scarce, inventive homemakers looked for other ways to sweeten baked goods. Honey, corn syrup, molasses, and maple syrup were oftenused as sweeteners,
HOW TO MAKE MUSTARD PICKLES Prepare water bath canner and begin warming the water. In a large stainless steel pot, combine sugar, dry mustard and turmeric, celery salt, and ClearJel®, then pour in a ½ cup of water, whisking until combined and smooth. Pour in vinegar and bring to a full boil whilestirring.
CHERRY JAM RECIPE WITHOUT PECTIN AND LOW SUGAR Roughly chop up cherries. Place chopped cherries in a large stock pot. Add 1/2 cup water to cherries. Bring to a boil and allow to simmer for 15 minutes, stirring occasionally. You'll see the cherries begin to break down and thicken. Stir in sugar and lemon juice, mixing well. Bring to a full rolling boil, stirring constantly. STRAWBERRY JAM RECIPE WITHOUT PECTIN AND LOW SUGAR Place berries, sugar, lemon juice, and lemon zest (or grated apple if using in place of lemon) into large pot. Stir until well combined. Bring berries to a boil. Stir frequently to keep sugar from scorching. Simmer on a low boil for 20 minutes. You can test the set of the jam bythe sheeting test.
