CARIBBEAN VEGGIES
2. Cut 4 small red onions into halves. 3. Add the vegetables to a heavy roasting tin. 4. Mix 4tsp Caribbean seasoning with 6tbsp olive oil & stir the mixture into the vegetables. 5. Roast in a preheated oven at 230’C for 30mins (can also sit in the oven whilst wecontinue to film)

Method: Add the kidney beans (including the liquid) & the Coconut Milk to a large saucepan with the onion, garlic, thyme & salt. Add 2 cups of water, stir through & then bring to the boil. In January 2007 Levi Roots was invited on to the BBC show Dragons’ Den where he famously sang about the virtues of his Reggae Reggae Sauce and became, without doubt, the most famous participant on the show. Method: Add the kidney beans (including the liquid) & the Coconut Milk to a large saucepan with the onion, garlic, thyme & salt. Add 2 cups of water, stir through & then bring to the boil. Meanwhile rinse the rice in a sieve until the water runs clear. Once the Coconut Milk has reached boiling point add the rice, stir, reduce the heat & simmer CARIBBEAN PINEAPPLE SALSA 500g pineapple chunks- fresh is best but you can use tinned (in natural juices) 1 red pepper, diced. 1 red onion, diced. A handful chopped coriander. Juice of 1/2 lime. ½ tbsp. Levi Roots Scotch Bonnet Sauce or ¼ Scotch Bonnet Chilli, finely diced.TABLE SAUCES

If time permits, leave to marinate in the fridge overnight. 2. Preheat the oven to 190’c. Place the chicken on a foil covered tray and cook for 30 mins or until the chicken is cooked through and the juices run clear. Whilst the chicken is cooking, begin cooking the rice ‘n’ peas. 3. LEVI'S SPECIAL STUFFED PEPPERS Add the chopped herbs and check seasoning. Place the halved peppers on a baking tray and generously fill with the rice mixture. Add a couple of slices of cheese to each. Drizzle with a little olive oil and bake in the oven at 200˚C for approx 20-25minutes. Abolitionists in the Americas and in Europe became vocal opponents of the slave trade throughout the 19th century. The importation of slaves to the colonies was often outlawed years before the end of the institution of slavery itself.EASY JERK CHICKEN
Heat the oven to 200c. Heat the oil in a baking tray and carefully add the chicken pieces. Brown lightly on each side. Pour over the Reggae Reggae sauce and try to coat each piece of chicken. Place in the oven and cook for approx 40 minutes, turning occasionally to ensure the chicken gets nice and sticky. Serve with lashings of extra Reggae ROOTS’ REGGAE REGGAE CHICKEN Heat the oil in a saucepan until hot, add the sliced chicken and fry until cooked through and golden brown. In another saucepan heat the Reggae ReggaeCooking Sauce then add the diced peppers. Leave it to simmer for 5 minutes, add the cooked chicken and serve with rice andpeas. Easy!
