BIRD COCKTAIL
A non-traditional take on the classic accompaniment for fish ‘n chips. Mushy peas are best pals with fish ‘n chips. But they also make a great sidekick for grilled or roasted meats, fowl, or other seafood. Our recipe uses frozen peas (instead of dried), then adds mint and lemon. A crumble (often called a crisp) is similar to cobbler (like this great Peach Cobbler).But while cobbler is topped with biscuit dough, crumble is covered in streusel — which is a mixture of butter, flour, and sugar (sometimes with other ingredients added). KITCHEN RIFFS: QUICK CORN RELISH When done, drain, and pour the corn into a small mixing bowl. Meanwhile, combine the vinegar, sugar, Kosher salt, celery seed, yellow mustard seed, and hot pepper sauce (if using) in a small saucepan. Bring the mixture to a simmer on medium stovetop heat. Simmer for 2 minutes. Remove from heat and allow to cool. KITCHEN RIFFS: EASY AND TASTY ROAST CABBAGE Recipe: Easy and Tasty Roast Cabbage Some cooks like to cut cabbage into wedges or rounds when they roast it (see Notes for the method). That works well, but we prefer to chop it into rough shreds, then toss it with olive oil and seasonings. KITCHEN RIFFS: THE MR. BALI HAI COCKTAIL Recipe: The Mr. Bali Hai Cocktail The 1950s marked the high point for Tiki-themed restaurants in the US. You might say it was peak Polynesian. It was during this time that the Bali Hai restaurant, located on Shelter Island in San Diego, was founded. KITCHEN RIFFS: THE STORK CLUB COCKTAIL Procedure. Place all ingredients (except garnish) in a cocktail shaker half-filled with ice. Shake vigorously until the contents are well-chilled (about 20 seconds). Strain into a cocktail glass, preferably one that has been chilled. Add an orange twist for garnish, if desired, and serve. Notes. KITCHEN RIFFS: TONNATO (TUNA) SAUCE AND DIP Recipe: Tonnato (Tuna) Sauce and Dip This sauce plays a starring role in Vitello tonnato (cold sliced roast veal with tonnato sauce), a classic Italian dish. But tonnato sauce also pairs beautifully with roast pork or poultry. For this post, we focus on how to make the basic sauce (or dip). KITCHEN RIFFS: POACHED SCALLOPS Procedure. Peel and finely mince shallots. Add to small saucepan (2-quart or smaller). Add vermouth, ¼ cup water, and salt. Put on stovetop, bring to a simmer. Simmer for 5 - 10 minutes to develop flavor. Then add the cooked sausage slices (Step 3) and the minced parsley. Toss with the potatoes until well mixed (make sure not to break up the potatoes too much). Taste, add salt if necessary, and serve. KITCHEN RIFFS: EASY NO-KNEAD HOMEMADE BREAD Procedure. In a large bowl, whisk flour, yeast, and salt together. Add lukewarm water and stir with a wooden spoon (just enough to mix together, with no dry patches). Dough will be loose and wet. Cover with a dishtowel. Let dough rise at room temperature for at least 3 hours (up to 5 hours). KITCHEN RIFFS: APRIL 2021 Asparagus and White Bean Soup. It’s spring in our part of the world. It’s a wonderful weeknight way to celebrate fresh, local KITCHEN RIFFS: THE MOTHER-IN-LAW COCKTAIL Recipe: The Mother-in-Law Cocktail We learned about this drink from Ted Haigh’s Vintage Spirits and Forgotten Cocktails.Haigh discovered it on Chuck Taggart’s website, The Gumbo Pages. (BTW, if you’re not familiar with The Gumbo Pages, it’s one of the best sources we know for authentic Louisiana food and drink recipes.) This cocktail dates back at least to the early 20th century. KITCHEN RIFFS: RED PEPPER AND ONION FRITTATA Preparation. Preheat oven to 400 degrees F. Slice your onion, red peppers, and garlic. Warm a 10-inch nonstick frying pan over medium to medium-high heat. When the pan is hot, add oil, wait until it heats, then add the sliced onion. Salt and pepper lightly and sauté for acouple of minutes.
