NEW ORLEANS MUFFALETTA Mix together the mustard and horseradish and spread on the bread. Butter the outside of the bread and toast on low heat until slightly crispy. Remove from heat and set aside. Cut the bread into 2 layers horizontally. Layer half of the provolone on the bottom half of bread. CRISPY SHEPHERD’S PIE Preheat a large skillet over medium high heat. Add oil to pan with beef, prosciutto and onions. Season meat with salt and pepper. Brown and crumble meat for 3 or 4 minutes. Add chopped carrot and peas. Cook veggies with meat 5 minutes, stirring frequently. In a second small skillet over medium heat cook butter and flour together 2 minutes. FRIED ONION RINGS AND SQUASH Heat oil in heavy pot or deep fryer until oil temperature is 370 degrees F. Divide onion slices into rings and cut squash into small strips. Pour milk, club soda and 1 tsp salt into a bowl and add the onions and squash. Cover and refrigerate for 2 hours. Place your salmon in a large ziploc bag or pan and season with a dash of salt and pepper and then drizzle with the marinade mixture. Just need enough to coat the salmon. You should have at least ¼-1/3 cup left- Reserve the remaining marinade. Heat your non-stick skillet to high heat.FRIED CATFISH

( you may leave whole if you like but makes frying easier if the fish is in smaller pieces).Next, place the mustard, lemon juice, buttermilk, 1 tsp salt, 1 TBSP cajun seasoning and 1/2 tsp pepper in a large Ziploc bag and shake up to mix everything. NOW REFRIGERATE at least 2 NEW ORLEANS MUFFALETTA Mix together the mustard and horseradish and spread on the bread. Butter the outside of the bread and toast on low heat until slightly crispy. Remove from heat and set aside. Cut the bread into 2 layers horizontally. Layer half of the provolone on the bottom half of bread.CAJUN MEAT PIES
