Whilst the stroganoff is cooking, begin to cook the rice according to packet instructions. Add the cream and a generous amount of pepper to the stroganoff, then simmer for approximately 5 minutes, stirringfrequently.

SOYA MINCE AND VEGETABLE LASAGNE Fry the vegetables in a little oil until softened. Add the soya protein and cook for a further 5 minutes, stirring all the time. Add the tomatoes, oregano and soya sauce and simmer for 10 minutes. Season if required. Make the sauce by melting the margarine in a pan and stirring in the cornflour. Cook for 2 HELP GET FOOD ON PEOPLE'S TABLES The Vegetarian Society is helping to tackle this problem by sending out veggie food boxes. The boxes have the ingredients and recipes for two dishes – a bean chilli and a green lentil and tomato ragu, which will make enough food for eight meals. CHICKPEA AND VEGETABLE CURRY Method. Heat the oil in the large saucepan then gently fry the onion for 2 minutes. (Drop a piece of onion into the oil as it is heating. When the onion starts to sizzle, the oil is ready). Add the garlic and curry powder and stir, giving the onions and garlic a good coating of RED LENTIL BOLOGNESE Heat the oil in a large pan and add the onion. Cook for 2 to 3 minutes until it starts to soften and then add the garlic, carrot and celery. Fry for another 3 to 4 minutes. Add the lentils, tinned tomatoes, tomato purée, stock and herbs and bring to the boil. Reduce to a simmer and cook for 25 minutes until the lentils and vegetables aresoft.
PERFECT ROAST POTATOES Fill a large saucepan with water. Bring to the boil and add the potatoes. Simmer for 8 minutes. Drain the potatoes into a large colander and gently shake to break up the potatoes slightly. Take the tray out of the oven. Add the potatoes along with the rosemary and thyme. Coat the potatoes with the oil using a metal spoon and returnto the oven

Place the sweet potatoes into the pan and simmer for 15 minutes or until soft. When done, drain in a colander and leave to one side. While the potatoes are cooking, start making the filling. Health and Nutrition Fats and omegas. Fat is an important source of energy. It protects the body against heat loss, helps to take in vitamins A, D and E, and is an important part of the brain. Commercially produced by bacterial fermentation of starch, molasses or whey. Mainly used as a preservative. Found in some cheeses, sponge cakes, ice creams, margarine and sweets. QUICK AND EASY SPAGHETTI BOLOGNESE Method. Heat the oil in a frying pan, add the onion, carrot, celery and garlic, and cook over a moderate heat for about 5 minutes until the vegetables have softened. Add the mushrooms and continue to fry for 2-3 minutes. Pour the chopped tomatoes into the pan CHICKPEA AND VEGETABLE CURRY Method. Heat the oil in the large saucepan then gently fry the onion for 2 minutes. (Drop a piece of onion into the oil as it is heating. When the onion starts to sizzle, the oil is ready). Add the garlic and curry powder and stir, giving the onions and garlic a good coating of VEGETABLE STIR FRY WITH CASHEW NUTS Method. Heat the oil in a wok and fry the onion and garlic for 3 minutes. Add the peppers and fry for 3 minutes more. Add the broccoli florets, sweetcorn and courgettes and continue to fry for a further 5 minutes. Add the water chestnuts and toss to mix in. In a small bowl, mix together the shoyu, arrowroot and light stock, ginger juice and BATTERED TOFU “FISH” Method. Place the water, salt and lemon in to a pan and add the tofu. Bring to the boil then simmer for 10 minutes. This will add firmness to the tofu. Remove from the water and place on a paper towel. Slice the tofu into “fish” sized triangles (approximately 30g per piece). You can cut it into larger pieces for ‘fish finger’sandwiches
