Strawberry Coconut Tres Leches Cake. May 2, 2021 by TheRunawaySpoon Leave a Comment. Tres Leches Cake is a favorite of mine, ever since a friend from Nicaragua shared a family recipe many moons ago. Tender cake drenched in rich milks that add flavor and richness. At its essence, it is a very simple sweet, but one I always order if I see ona menu.
CHOCOLATE BUTTERMILK POUND CAKE WITH For the Cake. Preheat the oven to 325°. Spray a standard 9 x 5 inch loaf pan with baking spray (like Baker’s Joy). Beat the butter in the bowl of a stand mixer with the paddle attachment until creamy. Add the brown and granulated sugars and beat until light and fluffy, about3 minutes.
BOILED PEANUTS
This week, the farmers market was looking a little forlorn as summer moves into fall. The tomatoes and beans are fading, but the winter squash and pumpkins aren’t quite in yet. But I did find a nice treat at one of the stalls. Raw peanuts. Nice, big fat ones just waiting tobe boiled up.
TASSO GRAVY
Cook until the vegetables are soft, about 5 minutes. Add the creole seasoning and stir well. Now slowly pour in 2 cups of the chicken broth, stirring constantly, until the gravy is thick. Stir in the tasso, then the andouille until combined, then pour in the remaining broth, stirring constantly. Bring the gravy to a bubble and cook,stirring
DUBLIN LAWYER (SHRIMP IN IRISH WHISKEY CREAM SAUCE 1 pound very large shrimp, peeled and deveined, thawed if frozen. Melt the butter in a large sauté pan over medium high heat. Add the chopped green onions and sauté until soft and glassy. Add the garlic and cayenne and generous pinches of salt and pepper and cook a further minute. Remove the pan from the heat and pour in the whiskey. PIMENTO CHEESE CRISPS Instructions. Rinse and drain the pimentos and place them on paper towels. Pat them dry and then leave them for 10 – 15 minutes to air dry. Grate the cheese and the cold butter together in a food processor. Switch from the grating blade to the metal blade, then add the flour, Worcestershire sauce, garlic powder, paprika, cayenne saltand pepper.
MARDI GRAS POTATO SALAD Instructions. Preheat the oven to 425°. Cut the potatoes into bite sized pieces (quarters or eighths, depending on size). Spread the potatoes out on a rimmed baking sheet and drizzle over the tablespoon of olive oil and sprinkle with salt and some black pepper. Roast the potatoes until a knife inserted in the center of a piece meets no FRESH FIG CAKE WITH BUTTERMILK GLAZE Place the buttermilk, butter, sugar, corn syrup and baking soda in saucepan and bring to a boil over medium heat stirring constantly. It will be white and fluffy. Remove from the heat, stir in the vanilla and immediately brush the glaze over the cake with a pastry brush, covering the top and the sides. The glaze will sink into the cake, it FRESH HERB FIELD PEAS When the peas are cooked, strain through a strainer and discard the bacon, garlic cloves and herb bundle. Scrape the herb butter into the saucepan over low heat until it begins to melt. Return the peas to the saucepan and gently stir through the butter until the peas are coated. LEMON SPECULOOS ICEBOX CAKE Place the cream and salt in the bowl of a stand mixer fitted with the whisk attachment and beat at medium high until it begins to thicken. Slowly drizzle in the sugar and beat until the cream holds very stiff peaks. Spread a layer of about ¼ of the whipped cream HOMEMADE BLOODY MARY MIX (WITH CANNING INSTRUCTIONS) After storage, the mix may be a bit thick. Just thin it with a bit of water, and of course, vodka. Place all the chopped vegetables in large Dutch oven. Add a splash of water, cover the pot, and cook until the vegetables are mushy, 30 – 40 minutes. Stir occasionally, breaking up the vegetables with the back of a spoon. FRESH HERB FIELD PEAS When the peas are cooked, strain through a strainer and discard the bacon, garlic cloves and herb bundle. Scrape the herb butter into the saucepan over low heat until it begins to melt. Return the peas to the saucepan and gently stir through the butter until the peas are coated. Taste and adjust seasoning and serve. By The Runaway Spoon. CORNED BEEF AND CABBAGE COOKED IN BEER 1 teaspoon brown mustard seeds. 1 medium head green cabbage. 3 strips bacon, or 2 Tablespoons bacon grease. Discard any seasoning packet that comes with the corned beef. Rinse the corned beef and place in a large Dutch oven. Pour in the beer and add enough water to cover the meat. Drop in the bay leaves, peppercorns and mustard seeds.CHERRY BOUNCE
Cherry season is beginning, or at least fresh cherries are showing up in the markets here. We don’t grow cherries locally, so when I start to see them at the grocery, I buy them up. I love cherries, so I try to make the season last as long as possible. I bake with the beauties, CUBAN CORN AND BLACK BEAN SALAD Drain well. In a large bowl, combine the well drained beans and corn. Finely dice the peppers and the onion and add to the bowl. Finely mince the cilantro and add to the bowl. Gently stir or toss the salad, being careful not to mash the beans. Mix the sugars, flour, baking soda, spices and salt together in a large bowl. I like to use my good clean hands to break up any lumps of brown sugar.
