WHIPPED CHOCOLATE FROSTING Bake at 350 degrees F. for about 40 minutes or until toothpick inserted in center comes out with just a few moist crumbs. Allow to cool in pans for 10 minutes, then remove from pans and finish cooling on racks. If using 9" pans, baking time will shorter. Frosting recipe adapted from Our Best Bites. FRESH BLUEBERRY PIE FILLING It’s a little like making a simple syrup. You don’t need it to boil, just heat it until everything is nicely dissolved. The heat just gives the sugar a little hand with that. Then, add your fresh blueberries, but don’t add all of them. We only need 4 out of the 6 cups of the berries for this step. Reserve the rest. LEMON ALMOND CHIA BREAD Preheat oven to 350 degrees F. Line a 9 x 5 loaf pan with parchment paper. In a medium bowl, whisk together the almond flour, chia seeds, salt and baking soda. Set aside. In a separate bowl, whisk together the eggs, vinegar, yogurt and lemon zest. Whisk in the melted butter until well combined. DUTCH APPLE PIE MUFFINS To make the muffin batter, in a large bowl, whisk to combine flour, baking powder, baking soda, salt and apple pie spice. In a separate bowl, whisk brown sugar, eggs, applesauce, milk and oil until well combined. Pour egg mixture into flour mixture and stir only until combined. Scoop into prepared muffin pan. The cups will be almostfull.
LEMON BLUEBERRY SHORTBREAD BARS Make the shortbread crust. In a medium bowl, whisk together flour and cornstarch. Set aside. In a large bowl, beat softened butter and sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla and beat until well combined. On low speed, gradually add the flour mixture and mix until combined. LEMON RICOTTA POPPYSEED CHAFFLES Lemon Ricotta Poppyseed Chaffles offer a delicious low carb dessert or low carb breakfast option.
