TOK-SEL LIMA BEANS RECIPE Preheat oven to 350 degrees. 2. If using fresh beans, blanch them in boiling water for 1 minute, then rinse and dry. If you use frozen beans, defrost. 3. Chop the green onions and parsley, medium to fine. Set aside. 4. Roast the pumpkin seeds in the preheated oven, then grind them (medium to fine) in a food processor. LOCAL, SEASONAL MAYAN FOOD Food Truck. In August of 2017, we opened a food truck in partnership with Gravely Brewing Co, a new craft brewery and music venue on Baxter Ave. This is a more casual expression of our food, albeit very appropriate, as Mayan food is inherently street food. Cut tomatoes into large chunks. Chop onion into large chunks. Cut bell pepper in half and leave seeds and inside parts. Put all vegetables & herbs into a large pot and cover with water. Boil on medium heat with a lid on for 30-45 minutes. Once the sauce is cooked, let liquid coolfor 10-15 minutes.

Entrées | $10/person. Roasted grass-fed Pork in achiote sauce (gf) Grilled chile-rubbed grass-fed Flat Iron Steak in Yucatec red mole sauce (gf)*. 2 peaches, pitted and chopped into cubes. Chocolate sauce. COOKING INSTRUCTIONS. Cut peaches into quarters and remove pits. Roll the peach quarters around in the batter and then scoop out and drop it in a fryer (or deep pan with oil) Let churro fry for 2-3 minutes or until cooked. Drizzle with chocolate sauce to serve. Cut tomatoes into large chunks. Chop onion into large chunks. Cut bell pepper in half and leave seeds and inside parts. Put all vegetables & herbs into a large pot and cover with water. Boil on medium heat with a lid on for 30-45 minutes. Once the sauce is cooked, let liquid coolfor 10-15 minutes.
- COCHINITA PIBIL RECIPE Instructions. Preheat oven to 350 degrees. Cut pork shoulder into large cubes & put them in a deep pan. Split all the other ingredients in two parts and blend each part in a blender. Pour on top of the cut meat until it barely covers the meat with liquid.
