MENU PLANNER.
SIMPLE, FRESH TOMATO SAUCE In a large saute pan, heat olive oil over medium-low heat until warm. Add tomatoes. Stir and cook for several minutes until tomatoes soften. Add garlic, white wine, and 1 tsp salt. Stir for an additional minute. Add basil and stir until it just begins to wilt and release flavor. Taste and season with additional salt, if desired. CANNED SALMON RECIPES Canned salmon is an overlooked ingredient, in my opinion. It’s a fantastic source of protein, omega-3 fatty acids, and calcium. In addition, canned salmon is typically fresh caught vs. farmed, and inexpensive compared to its fresh counterpart. EASY THAI YELLOW CURRY CHICKEN Saute and stir the curry paste for 1-2 minutes, or until it becomes fragrant. Add coconut milk and brown sugar, and stir until combined. Once the mixture begins to bubble, add chicken and onion. Saute, stirring frequently for about five minutes, or until the chicken is opaque. Add potato, set to a low simmer, and cover. SUPER EASY CHICKEN AND SAUSAGE GUMBO Saute and stir for 5-6 minutes or until vegetables are tender. If needed, add a little bit of stock to the pan to prevent ingredients from sticking. Add stock and tomatoes. Bring to a boil. Reduce heat to a simmer. Return sausage to pan and add okra. Simmer for 10 minutes, or until okra is tender. JUICY AND CRISPY DRY BRINE CHICKEN Preheat oven to 400. Place the chicken on a rack in a roasting or baking pan. Roast for approximately 1 hour, or until internal temperature of the chicken reaches 165 degrees in its meatiest part. Let rest for 15 minutes before carving and serving. EASY ROAST BEEF SLIDERS Pre-heat oven to broil. Slice rolls in half (if not pre-sliced) and spread horseradish sauce on the top half of the rolls. Set aside. Place the bottom halves of the rolls onto a baking sheet. Top with roast beef and provolone cheese. Place under the broiler until the cheese melts and begins to bubble. I did alter it slightly : I added 1/2 cup of oat milk, replace oil with 1/2 cup of coconut oil, used wheat flour, and used 1/2 cup of brown sugar. ROSEMARY AND GARLIC WHITE BEANS These creamy braised white beans, seasoned with rosemary and garlic, make a delicious and easy side dish. This recipe is based on our favorite white beans from Zoe's Kitchen. SIMPLE, FRESH TOMATO SAUCE In a large saute pan, heat olive oil over medium-low heat until warm. Add tomatoes. Stir and cook for several minutes until tomatoes soften. Add garlic, white wine, and 1 tsp salt. Stir for an additional minute. Add basil and stir until it just begins to wilt and release flavor. Taste and season with additional salt, if desired. CANNED SALMON RECIPES Canned salmon is an overlooked ingredient, in my opinion. It’s a fantastic source of protein, omega-3 fatty acids, and calcium. In addition, canned salmon is typically fresh caught vs. farmed, and inexpensive compared to its fresh counterpart. PRETZEL CRUSTED CHICKEN Taste and season with a little bit of salt. Place HALF of the mustard mixture into a shallow dish and add the uncooked chicken. Turn to coat. Dredge the marinated chicken in the pretzel crumbs until coated on both sides. Place chicken on a rack over a baking sheet. Bake for 20-25 minutes, or until internal temp reaches 165. MAKE AMAZING PIZZA AT HOME WITH STORE BOUGHT DOUGH 7) Pre-bake the crust for 3-4 minutes before topping. This helps seal the dough so that the toppings don’t make it soggy. I don’t have any sort of fancy pizza pan or baking stone, so I just used a regular old cookie sheet. You can top your pizza with whatever SUPER EASY CHICKEN AND SAUSAGE GUMBO Saute and stir for 5-6 minutes or until vegetables are tender. If needed, add a little bit of stock to the pan to prevent ingredients from sticking. Add stock and tomatoes. Bring to a boil. Reduce heat to a simmer. Return sausage to pan and add okra. Simmer for 10 minutes, or until okra is tender. FEELING BLAH? TRY THIS. 3) Make some plans. A vicious cycle happens, where feeling blah tends to make me a little hermit-y, and being hermit-y tends to make me feel more blah. To break the blah/hermit cycle, I bust out the calendar and make some plans. It can be something as simple as meeting someone for coffee or lunch or a drink or a workout. Chop In a small bowl, stir the chopped herbs into the mayonnaise. Set the oven to broil and place the slices of bread on a cookie sheet. Place the bread under the broiler and heat until it starts to get lightly brown on top. Only toast one side. Let the bread cool slightly, and then build the sandwich. EASY ROAST BEEF SLIDERS Pre-heat oven to broil. Slice rolls in half (if not pre-sliced) and spread horseradish sauce on the top half of the rolls. Set aside. Place the bottom halves of the rolls onto a baking sheet. Top with roast beef and provolone cheese. Place under the broiler until the cheese melts and begins to bubble. Roast for approximately 1 hour, or until internal temperature of the chicken reaches 165 degrees in its meatiest part. Let rest for 15 minutes before carving and serving. FEELING BLAH? PUREED RED LENTIL SOUP Instructions. Heat olive oil in a large soup pot. Add onion and stir, cooking until translucent. Add garlic and saute for one additional minute. Add all other ingredients to the pot. Bring to a boil and then reduce to a low boil/simmer. Simmer for 30-40 minutes, or until lentils and potatoes are soft. This recipe is based on our favorite white beans from Zoe's Kitchen. THE BEST AUTHENTIC PASTA E FAGIOLI Add the pureed mixture back into the pot, along with the drained beans, the chicken and beef broth, salt, and crushed tomatoes. Bring to a boil. Once boiling, add the pasta and cook until al dente, stirring occasionally to prevent sticking. Once the pasta is cooked, remove from heat. Taste, and add more salt if necessary. SPICY ASIAN CHICKEN STIR FRY In a large skillet or wok, warm 2 tbsp canola oil over med-high heat. Add the chicken and a splash or two of the sauce. Stir-fry until chicken is cooked through (no longer pink). Remove the chicken to a plate. Add 1 more tbsp of oil to the pan and pour in the snap peas, garlic, ginger, and scallions.__
