COOKS JOY - OVEN BAKED BREADED OKRA Spray a baking sheet and spread the okra in it. Place in a preheated 400F oven for 30 minutes shaking the pan once in the middle. Out of the oven, nice and crispy. Add the rest of the ingredients except spinach and cheese. When vegetables are cooked add spinach; when it wilts down add the cheese. Then knead for about 20 - 30 minutes until it forms a ball. The dough will start slapping the sides and then will form a ball. The dough will be extremely sticky. Place COOKS JOY - EGG CASSEROLE WITH VEGETABLES Mix the ingredients for egg mixture and add the cooked vegetables to it. Chop bread into big chunks and spread in a 9 x 13 pan. Pour the egg mixture over it and place in fridge for about 4 hours. If the mixture looks dry at the end of 4 hours add a little milk. Bake in a COOKS JOY - WHOLE WHEAT SANDWICH BREAD Start with 3/4 cup of water and add more as needed. Mix well until the dough is well hydrated and resembles a loose dough. Cover and leave at room temperature for 12 - 24 hours. Big / Sponge. Take the biga ingredients in a bowl and mix to form a dough. Again, start with 3/4 cup milk and add more as needed. COOKS JOY - CIABATTA BREAD Mix ingredients for bread along with poolish and knead well until a you get a smooth dough. The dough will be very sticky. Allow dough to rise until doubled. Sprinkle work area generously with flour. Pour dough onto the work area. Sprinkle with flour and pat into a square. COOKS JOY - SOURDOUGH BANANA MUFFINS Instructions: Mix sourdough starter and flour and leave to rise for about 12 - 24 hours. When ready to bake, mix the dry ingredients in a bowl and sprinkle over the dough. Mix wet ingredients separately and gradually stir into the dough. Pour into muffin cups or a mini-bread pan. Bake in a preheated 375F oven for for 18 to 20 minutes formuffins.
COOKS JOY - BOLILLOS (MEXICAN ROLLS) Roll each piece into a cylinder between the palms and taper at the ends. Allow the rolls to rise again. Heat up corn starch and water and keep stirring until the liquid thickens and looks glossy. Apply the glaze over the bolillos. Make a slit about 1/2 inch deep along the side with a sharp knife. Then knead for about 20 - 30 minutes until it forms a ball. The dough will start slapping the sides and then will form a ball. The dough will be extremely sticky.
