IMMUNE JUICE BOOST
Are you looking for a tasty way to give your body a boost? Do you own a juicer? Here's my current favorite immune-boosting juice. After being seriously run down last fall I consulted a doctor to find ways to strengthen my immune system. She had a very simple list for me: take zinc and a lot of vitamin C. And of course, sleep. I've always known that vitamin C is a good thing, but I couldn't PUMPKIN CHEESECAKE {DAIRY FREE} This is my first time creating a pumpkin cheesecake, and I chose to make it dairy free using cashews and baking it, versus using cashews to make a raw cheesecake. I'm a huge fan of the classic New York-style cheesecake. That said, I'm into non-dairy versions of things, but cheesecake is definitely a challenge to make with out thick creamycheese.
DEEP DISH PIZZA {ALMOND & COCONUT FLOUR} This deep dish pizza recipe uses both almond and coconut flour to build a sturdy crust with a crunch around the edges. It reminds me of a cornmeal pizza crust that I've had on a few occasions at an artisan pizza restaurant, way back (over 20 years) when I lived in the Boston area. I offer some great pizza crust recipes, including this focaccia crust, as well as 2 great flatbread crusts in my CASHEW WAFFLES {GRAIN FREE} Instructions. Warm up your waffle maker. Add all the ingredients to a food processor or high speed blender, and process until smooth. Pour about 1/4 to 1/3 cup of batter for one waffle (check the waffle maker instructions as well). Store leftovers in the refrigerator for a CHOCOLATE ZUCCHINI BREAD {ALMOND FLOUR} Add the almond flour, cocoa, baking soda, and salt to a food processor and pulse to blend the ingredients. Add the eggs, oil, maple syrup, vanilla, and grated zucchini to the food processor and pulse a few times to blend the ingredients. Add the batter to the loaf pan and bake for 35 minutes. Cool for about an hour before slicing. BANANA BREAD {ALMOND FLOUR} Instructions. Preheat oven to 325°F (165°C, or gas mark 3). Mix all the wet ingredients together in a bowl until well blended. Add the dry ingredients to the wet ingredients and mix well again. Bake for 45 minutes or until a toothpick comes out clean from the middle of theloaf.
“POTATO” SALAD
This salad is a nice replacement for those not eating complex carbohydrates, like potatoes. Yes, it's fake potato salad. Cauliflower is the stand-in for potato here and it does a respectable job of it. The key is to play up the other ingredients and flavor to your liking. It goes great as a side, or you can turn it into a full blown salad by adding grilled protein, more veggies, or serve withTURKEY MEATLOAF
Combine the onion and garlic mix, turkey, salt, oregano, mustard, 3 tablespoons of ketchup, and egg in a bowl and blend well with a spoon or fork. Place the turkey mixture in a baking pan and bake for 20 minutes. Spread 1/4 of ketchup across the top of the loaf and bake for another 20 minutes or until the center is fully baked.
