RUSTIC NO-KNEAD BREAD RECIPE Rustic No-Knead Bread Recipe. In a large bowl, combine the flour, salt, and yeast together ( see recipe box below for amounts). Make sure it’s well mixed, and form a well in the center and add the water. Using a wooden spoon, mix until a loose, shaggy dough is formed. Don’t overmix it – just until all the loose flour has beenincorporated
HOMEMADE VEGAN SOFT PRETZELS Preheat oven to 450° F oven and line cookie sheet with parchment or silpat. Divide dough into 6 portions. Roll each ball into a 24″ log, and then form into pretzels. Drop pretzels into water bath for at leatst 30 seconds to 1 minute. Remove carefully and place on cookiesheet, repeat.
VEGAN WHITE BEAN ALFREDO Dice onion and add to saucepan along with 1 cup of broth and salt. Saute over med-high heat just until liquid is about to disappear. Add garlic and stir – remove from heat. Drain and rinse beans and add to blender. Add all remaining sauce ingredients including the onion to the blender. Blend until smooth and creamy. BEST DANG BBQ VEGAN BAKED BEANS Slow cooked, BBQ Vegan Baked Beans - from scratch. It's an all day process, but oh - the flavor is out of this world. You'll be the star of the cookout. Who says Vegan's can't go to BBQs!EASY VEGAN PAD THAI

After a night in the hospital, I came home with a new-found commitment to clean up my diet even more in order to get off the medications they put me on.VEGAN PEPPER STEAK

Meanwhile, puree tomatoes, onion, garlic, chile powder, oregano, cumin in a blender until smooth. Set aside. Dice carrots and have both peas and carrots standing by. Drain the rice and rinse until the water runs clear –drain thorougly.

made it just now with one bag of frozen corn and it worked great. cooked the corn first for about 10 min on the stovetop, then vitamixed all and cooked in a pan for only about 5 min. the texture is great, but the taste is not butter – don’t expect butter – expect a luscious, rich creamy spread! VEGAN THOUSAND ISLAND DRESSING Ah – here’s where I come in. I needed a Thousand Island Dressing for these sandwiches and since store-bought dressing is based on Mayonnaise – I was going to have to make my own. And it’s super easy. Tofu, Lemon Juice, Vinegar, Ketchup, and some Dill Pickles and you’re set to go. This is a blender recipe too – so cleanup is abreeze.
PERFECT INSTANT POT VEGGIE RICE Place rice in a fine sieve and rinse thoroughly, set aside to drain. Dice onion and carrot and add to your instant pot. Add garlic and rice – continue sautéing for another 30 seconds. Press the KEEP WARM/CANCEL button – and then add the salt, curry powder, and broth. WHAT IS A MARY'S MINI? Honestly, I have been making this very simple, very basic bread ever since I watched the YouTube video by Mark Bittman of the New York Times back in 2006. Soak noodles in warm water for 30 min; Press and cut tofu into 1-inch cubes; Bake or air fry tofu for 15 min @375° F, set aside; Remove pits from dates and add to blender BASIC OIL-FREE HUMMUS The pantry may look a little empty, but if you have just a few basic ingredients – you can still make this Basic Oil-Free Hummus.. This is my standard Hummus recipe that is super simple to make with a couple of cans of chickpeas, some garlic, and lemon juice. INSTANT POT VEGAN REFRIED BEANS Sometimes the easiest meal to prepare can also be the healthiest, like these Vegan Refried Beans.. Made completely from scratch using dried Pinto Beans, these will taste nothing like that stuff that plops out of a can, I promise. And without any of the fat, lard or VEGAN HOT AND SOUR SOUP Start with 8oz of Extra Firm Tofu. Drain all the water out of the package and then wrap the block of Tofu up in a few paper towels. Now cover it with something heavy (cutting board) and let it press all that moisture out for at least 5-10 minutes. STUFFED VEGAN CABBAGE ROLLS Clean and core cabbage, place in pot of boiling, salted water to steam for 5-10 min; Remove and drain – leaves should remove easily. If not, additional steaming will help VEGAN THOUSAND ISLAND DRESSING Ah – here’s where I come in. COOL VEGAN RANCH DRESSING Cool Vegan Ranch Dressing. Easy recipe – I promise. Soak a cup of whole, unroasted, unsalted, Cashews in some hot water for at least an hour. The longer the better. Afterwards, drain the cashews well and add to a blender. Add in the remaining spices and flavorings, and blend on high until smooth and creamy. You may want to stop and scrape VEGAN HOT AND SOUR SOUP Set aside. Bring 2 cups of Low Sodium Vegetable Broth and 1 cup of Water to a slow boil in a large soup pot. Add mushrooms, tofu, bamboo shoots, soy sauce, and hoisin. Stir to combine. Let simmer for 3-5 minutes. Stir in vinegar, chili sauce, and pepper. Continue simmeringfor 1-2 minutes.
VEGAN COUNTRY SAUSAGE GRAVY Preheat oven to 350 Degrees F. Chop Cauliflower, Mushrooms, and Walnuts finely, to uniform size. Mix together in bowl and add Soy Sauce, Molasses, Maple Syrup, and Liquid Smoke. Mix well. Add remaining spices and mix very well. Turn out evenly onto parchment lined baking sheet and bake for 30 minutes. VEGAN THOUSAND ISLAND DRESSING Ah – here’s where I come in. I needed a Thousand Island Dressing for these sandwiches and since store-bought dressing is based on Mayonnaise – I was going to have to make my own. And it’s super easy. Tofu, Lemon Juice, Vinegar, Ketchup, and some Dill Pickles and you’re set to go. This is a blender recipe too – so cleanup is abreeze.
VEGAN GREEK SALAD WITH OIL-FREE DRESSING AND TOFU FETA Instructions. Drain and press Tofu and crumble into bite-sized pieces. Mix remaining Feta Ingredients and pour over the crumbled tofu in a shallow bowl. Mix, cover, and refrigerate until needed. Drain the juice from a can of Garbanzo Beans and save ( we’ll need 1/4 cup forthe dressing ).

BEST DANG BBQ VEGAN BAKED BEANS Slow cooked, BBQ Vegan Baked Beans - from scratch. It's an all day process, but oh - the flavor is out of this world. You'll be the star of the cookout. Who says Vegan's can't go to BBQs! HOMEMADE VEGAN SOFT PRETZELS Preheat oven to 450° F oven and line cookie sheet with parchment or silpat. Divide dough into 6 portions. Roll each ball into a 24″ log, and then form into pretzels. Drop pretzels into water bath for at leatst 30 seconds to 1 minute. Remove carefully and place on cookiesheet, repeat.

Preheat Wok over high heat (until a drop of water sizzles) Add garlic, ginger, and a few tablespoons of water and stir fry until fragrant (about 1-2 minutes) Add mushrooms and the marinade and stir fry until the liquid has evaporated. Remove mushrooms from wok, and add onion and peppers. Stir fry veggies until bright and crisp tender. BAKED FALAFELS WITH HOMEMADE TZATZIKI SAUCE Place on a parchment lined baking sheet and bake for 25 min at 400º F. To get a nice crispy coating – broil for an additional 10 minutes (5 minutes for each side). Simply stuff your pitas with 1-2 Falafels each, your choice of salad fixings. I recommend Leaf Lettuce, sliced Cucumber, Tomato, and sliced Red Onion. INSTANT POT VEGAN REFRIED BEANS Vegan Refried Beans. Start by using the SAUTE mode (LESS) setting on your Instant pot to sweat 1 diced yellow onion, 4 cloves of minced garlic, and 1 Jalapeño that has been seeded and minced. When the veggies have softened, simply turn OFF the pressure cooker, and add 2 cups of dried Pinto Beans that have been picked through and rinsed. BASIC OIL-FREE HUMMUS Drain the chickpeas into a bowl and save about 1/2 cup of the liquid. Rinse the chickpeas thoroughly and add to blender. Add all the remaining ingredients and blend until smooth and creamy, scraping down the sides occasionaly. Garnish with a sprinkle of Tajin for a littleextra flavor kick.

RUSTIC NO-KNEAD BREAD RECIPE Rustic No-Knead Bread Recipe. In a large bowl, combine the flour, salt, and yeast together ( see recipe box below for amounts). Make sure it’s well mixed, and form a well in the center and add the water. Using a wooden spoon, mix until a loose, shaggy dough is formed. Don’t overmix it – just until all the loose flour has beenincorporated
EASY VEGAN PAD THAI
Chop all veggies and prepare pan or wok. Using a little water or veg broth, heat up pan and add onion. Add peppers, carrots, and bok choy and stir fry until just softened. Add garlic and stir for 30 seconds. Add sauce and tofu – mix well and cook for an additional 1-2VEGAN ITALIAN BEEF
Instructions. Saute onion, garlic, and mushrooms until softened. Add remaining Broth Ingredients and bring to a low boil stirring to combine. Add Soy Curls and simmer for 30 minutes. In a separate saucepan, combine all Giardiniera ingredients and simmer until tender. Drain soy curls from broth and save broth for dipping. A quick and easy Vegan Chinese Pepper Steak - using Portabella Mushrooms. The sauce really ties the peppers and mushrooms together. Better than takeout! BAKED FALAFELS WITH HOMEMADE TZATZIKI SAUCE Baked Falafels – Crispy, crunchy, little patties of Spicy Chickpeas smothered in a tangy Cucumber Sauce. Ah.street food never tasted sogood!
VEGAN THOUSAND ISLAND DRESSING Ah – here’s where I come in. I needed a Thousand Island Dressing for these sandwiches and since store-bought dressing is based on Mayonnaise – I was going to have to make my own.. And it’s super easy. Tofu, Lemon Juice, Vinegar, Ketchup, and some Dill Pickles andyou’re set to go.
WHAT IS A MARY'S MINI? Below I will post all the notes I have to date which were graciously provided by the good folks at the Mary’s Mini for McDougall Followers Facebook Group (another excellent resource).
