MAY 2021 – MARCY GOLDMAN'S BETTER BAKING Dear Friends and Fellow Bakers, Welcome to the June 2021 issue of Betterbaking.com. Thanks to those of you who signed up for the May 2021 Special of the 2-yeares of BB for the one-year price. This month’s recipe collection is as always varied but what I FREE BB RECIPE CLASSICS 2 tablespoons light olive oil. In a mixer bowl or bread machine, whisk the yeast and water together. Add in most of the flour, semolina, salt, sugar and olive oil. Mix, then gently knead, adding in more flour as required to make a soft dough. Cover and let rise 8-12 hours. BURNT ORANGE CHEESECAKE This wee cheesecake is divine. It takes but one pound of cream cheese, there’s no crust to bother with and it bakes up into a mahogany, vanilla-orange scented cheesecake that is as decadent as it is unique. This small cheesecake uses a 7 inch springform pan or removable bottom pan. I get mine via EBay RASPBERRY-FILLED OATMEAL TURNOVER COOKIES Nothing beats a treat especially when it’s just sweet enough, rustic and buttery and as old-fashioned as these oatmeal cookies that hide a center of pure raspberry jam. This is a tender cookie that needs a bit of handling TLC. They are wonderful to munch on or dip in wine or espresso and as fancy as they look, that are ridiculously BURNT ORANGE CHEESECAKE This wee cheesecake is divine. It takes but one pound of cream cheese, there’s no crust to bother with and it bakes up into a mahogany, vanilla-orange scented cheesecake that is as decadent as it is unique.
