BREAD: VEGAN OR NOT? Enzymes. Although the enzymes used in bread seem to generally be fungal-based, there are several non-vegan enzymes used in commercial bread production. This includes one such ingredient called phospholipase, an enzyme derived from pig pancreatic tissue.
