1 cup tomatoes, diced. 2 green onions, sliced. directions. Cook the bacon in a skillet until crispy before setting aside and draining off most of the grease, saving only enough to cook the chicken in. Add the chicken to the pan and cook until light lightly golden brown, about 3-5 minutes per side. SALSA VERDE CHICKEN ENCHILADA SKILLET directions. Heat the oil in a large oven safe skillet/pan over medium-high heat, add the onion and zucchini and cook until tender, about 3-5 minutes. Add the cumin and garlic and cook until fragrant, about a minute. Add the salsa verde and mix in the sour cream followed by chicken, corn and tortillas. SLOW COOKER ROASTED GARLIC directions.
