ICING RECIPES
Choosing the right icing recipes for your cakes is a matter of taste and function. Some frosting recipes work better for covering the outside of the cake than for decoration. Another consideration is the temperature. Some won't hold up under warm weather conditions. Also,consider the audience when making your selection. Some adults consider buttercream too sweet, yet kids most kids love it. BOILED ICING RECIPE 1 Cover and cook for 3 minutes, allowing the steam to wash the sugar crystals down the sides of the pan. Uncover the pan and place a candy thermometer into the mixture. Heat to 240 degree F. The syrup should create a thin thread when dropped from a spoon. In a bowl, beat egg whites and salt until foamy. Add syrup in a thin stream whileconstantly

Slowly add in the powdered sugar w/ the mixer on medium until all sugar is combined and desired consistency is reached. SCULPTING RICE KRISPIE TREATS There are some cake elements that are just better made by sculpting rice krispie treats. They can be wrapped around pvc pipe, molded into different shapes, and carved. If you want to make figures that are a bit too large to dry in time, you can mold them from the rice krispies. They have a tendency to be to soft to work with if you use the butter in the recipe. CONSTRUCTION VEHICLE CAKES Shave the sides about 1/2 in with a knife for the track. Then I decorated with the number 18 tip, the bucket it black fondant, the round dots on the track, and the pull-up handles are also fondant. Rest is buttercream icing. This basketweave design is done with long strokes going horizontally, which creates a different type of pattern than the usual basketweave piping technique. GRAND MARNIER BUTTERCREAM Grand Marnier Buttercream is excellent on orange cake, grand marnier cake, chocolate cake and nut flavor cakes. Grand Marnier is a delicious liqueur (80 proof) made of blended cognacs and distilled bitter orange. It can be drank neat or in cocktails. It is often used to make crepes.
