The first, Quin’s Jests; or the Facetious Man’s Pocket–Companion.Containing every Species of Wit, Humour, and Repartee, with a Compleat Collection of Epigrams, Bon-mots, etc., etc., was published in London in 1766, the year of Quin’s death. WHAT IS A GRANT & HOW IS IT USED IN CRAFT BREWING? What they are referring to is a large recessed copper trough with a number of spigots pouring what appears to be a high volume of frothing beer into it. This device is called a “grant”. In the era when Anchor’s brewhouse was built – over 75 years ago – all German-style breweries were equipped with a grant. The grant wasinstalled
WHY PASTEURIZE CRAFT BEER? DOES IT AFFECT TASTE? The short answer is that pasteurization ensures the freshness of the beer and greatly enhances its shelf life as well. The notion that flavor is somehow adversely affected by the process is matter of opinion – and of some debate. There are different methods of pasteurization employed by breweries. By 1977, Anchor had five products, a dozen employees and had nearly outgrown its most recent brewery on 8th Street. After a long search, owner Fritz Maytag purchased our current building. A COMPLETE HISTORY OF PORTER All historical references to “porter” seem to go back to 1722 and one Ralph Harwood, a London brewer. Harwood created a beer that was originally called “Entire.”. Entire previously had referred to a blend of three separate beers, consisting of one third each beer, ale, and strong beer. This blend was also known as “Three Threads THE BEST FOOD PAIRINGS FOR BROWN ALE Anchor Porter with oysters, as well as with BBQ, for one. Anchor Steam with seafood, as well as with seasoned poultry, is another. For Brekle’s Brown Ale, I think that “medium” meat dishes work best. Think roast beef, pork, maybe chicken. Brekle’s has a refreshing, medium- to full-bodied character with a slightly tangy finish thatcuts
USING MALTODEXTRIN VS. CARAPILS TO ADD BODY IN A BEER Maltodextrin is a commercially produced substance, manufactured in a powder form, that is added to beer to increase the level of dextrins. Dextrins are compounds that are present in the malt. They are non-fermentable, flavorless, colorless, and non-caloric, but contribute to the body of the beer, as well as its mouthfeel and headretention.
"FLOATIES" IN CRAFT BEER This yeast will settle to the bottom of the bottle but will become “floaters” when the beer is agitated or moved – like when you are pouring it or drinking it. It’s not bad and doesn’t affect the flavor.
