Although soup really is one of my g0-to favorite ways to fill up (any time of the year), salads are high up on the list as well (if you’ve been reading my blog for a while then you probably know how much I love salad by now!).. Obviously fresh salad ingredients are important when getting back into the salad making mood. ROTISSERIE CHICKEN SALAD WITH APPLES AND ALMONDS Wondrous salad! People loved it! Made changes due to ingredients on hand and my mood. Used grilled chicken, substituted pecans-roughly chopped, 2 scallions-chopped using scissors (no powder), regular salt & pepper, generic apple, 1/2 tsp poultry seasoning (no tarragon), added 1 tsp lemon juice and a handful of sunflower seeds, Changed mayo/yogurt to more, and equal amounts. SKINNYTASTE TOMATO-SPINACH TORTELLINI SOUP Press the saute button and bring the soup back to a boil. Stir in the tortellini, 1/3 cup of the pecorino, the salt and pepper to taste. Cook according to the pasta package directions, adding the spinach at the last minute. To serve, ladle into 8 bowls and top with pecorino,

My slow cooker has been working on overtime lately. SUMMER SPINACH SALAD WITH TOMATO Ingredients. 5 plum tomatoes, chopped. 1 medium sweet or Vidalia onion, chopped. handful of kalamata olives, chopped. 2 – 3 cups of fresh baby spinach leaves. 2 – 3 tablespoons balsamic vinegar. 2 – 3 tablespoons olive oil. salt and pepper to taste. 1 12 HEALTHY WHOLE GRAIN SALAD RECIPES TO TRY THIS SUMMER If there is one thing I love, and really appreciate having in the fridge ready for me to eat, is a healthy whole grain salad. I got into whole grains about 10 years ago when I started following The South Beach Diet after having my daughter. WHOLE WHEAT GREEK YOGURT BANANA BREAD In a medium bowl combine eggs, banana, brown sugar, vanilla, Greek yogurt and oil. Add wet mixture into dry mixture and gently mix until just combined. PESTO PASTA WITH GROUND TURKEY AND KALE Add 1/4 cup pasta water to turkey and kale mixture. Season with a little salt and pepper. Turn off heat when kale is soft. When pasta is ready, use a large slotted spoon to transfer cooked pasta to turkey and kale mixture in skillet (or drain pasta in sink and add drained pasta). Add pesto to pasta, turkey and kale and toss until combined. HONEY LIME VINAIGRETTE I don’t know about you, but I’m ready to get back in the salad again. Although soup really is one of my g0-to favorite ways to fill up (any time of the year), salads are high up on the list as well (if you’ve been reading my blog for a while then you probably know how much I love salad by now!).. Obviously fresh salad ingredients are important when getting back into the salad making mood.
