At this stage the yolk and albumen can be separated if required. The egg then passes through a series of filters before being treated in a pasteurisation plant. Risk management. Zeagold Foods operates a Risk Management Programme (RMP) under the Animal Products Act 1999. This involves identifying through the production chain any potential risks to product safety and wholesomeness. A hazard analysis process is in place to control those risks identified and is backed up by a series of checks and records WHAT MAKES A QUALITY EGG? Once collected, the eggs are tested to assess the yolk colour and egg white quality. Egg white quality is measured in Haugh units - an international standard developed by American researcher Dr R Haugh in the 1930s, which measures egg white density.

Egg white quality is measured in Haugh units - an international standard developed by American researcher Dr R Haugh in the 1930s, which measures egg white density. CHERRY CLAFOUTIS

Cherry Clafoutis. Serves: Place the flour, icing sugar, lemon zest, ground hazelnuts, salt and butter in food processor. Pulse to combine. Add egg yolk and water - 1 tablespoon at a time until a firm dough is formed. Roll out pastry to fit a 26cm quiche dish and chill for 10-15 minutes. This involves identifying through the production chain any potential risks to product safety and wholesomeness. A hazard analysis process is in place to control those risks identified and is backed up by a series of checks and records WHAT MAKES A QUALITY EGG? Once collected, the eggs are tested to assess the yolk colour and egg white quality. Egg white quality is measured in Haugh units - an international standard developed by American researcher Dr R Haugh in the 1930s, which measures egg white density.

CHERRY CLAFOUTIS

Cherry Clafoutis. Serves: Place the flour, icing sugar, lemon zest, ground hazelnuts, salt and butter in food processor. Pulse to combine. Add egg yolk and water - 1 tablespoon at a time until a firm dough is formed. Roll out pastry to fit a 26cm quiche dish and chill for 10-15 minutes. Bake blind in a hot oven until golden brown – 8-10 minutes. SPINACH ROULADE FILLED WITH ASPARAGUS AND EGGS 250 grams asparagus, trimmed, blanched. Preheat oven – 200C. In a saucepan – melt butter, stir in the flour and cook for 1 min. Add milk and stir until thick. Remove from the heat, whisk in the egg yolks. Pulse the spinach in a food processor until roughly chopped.

SCOTCH EGGS

Beat egg and water, dip sausage wrapped eggs in beaten egg mixture. Roll in bread crumbs again, place on a rack in a shallow baking dish and bake at 200°C for approximately 35 minutes or until browned. Turn once during baking. At this stage the yolk and albumen can be separated if required. The egg then passes through a series of filters before being treated in a pasteurisation plant.
