Voor mij is de Noordzee een inspiratiebron en een speeltuin waarin ik me dagelijks kan verliezen. Door mijn nonkel die ijslandvaarder was en mijn vader die appelbomen in onze tuin had staan, raakte ik op jonge leeftijd gefascineerd door de zuivere terroir van het polderlandschap. Vele avonturen later begon ik een gastentafel in het vissershuisje van mijn ouders. Dat concept is organisch uitgegroeid tot een volwaardig restaurant waar Shannah en ik 30 gasten per dag mogen verwelkomen. Onze keuken draait op superieure seizoensingrediënten, zoals erwten en asperges uit eigen tuin, en het beste uit onze Noordzee. Klassiekers als mosselen en garnalen verwerk ik in creatieve maar duurzame bereidingen. Zonder overdaad. Zo streef ik ernaar om de diepste smaken uit mijn producten te halen. Mijn kookstijl is een reflectie van hoe ik zelf in het leven sta. Met respect voor het product, de vakman en onze gast. Daarom is het voor mij cruciaal dat ik het verhaal achter m’n gerechten zelf kan toelichten. Ook mijn vrouw Shannah voelt als geen ander mijn vurige visie op gastronomie aan. Met haar gastvrijheid brengt ze diezelfde persoonlijke touch aan tafel als gastvrouw. Zonder haar onvoorwaardelijke steun en guitige glimlach had ik nooit gestaan waar ik vandaag sta.
