It’s a super easy method of making a lovely sweet. HOW SAFE ARE FOOD ITEMS FROM CHINA? In general, Taiwanese products are reliable and well made. The sesame paste is great for cold noodle dishes. Don’t forget Hong Kong, a territory of China that’s been exporting products abroad for a long time. VIETNAMESE FOOD ANY DAY COOKBOOK PREVIEW! November 8, 2018 By Andrea Nguyen23 Comments
Get ready for Vietnamese Food Any Day! It releases on Tet/Chinese/Lunar New Year – February 5, 2019. I can’t wait for you to get your hands on the cookbook and start cooking, getting it messy, and adding your personal tweaks. I’ve been wanting to write this book for years because one of my not-so-secret life missions is this: Help people make great Vietnamese food part of their regular rotation. The book title isn’t telling you to make Viet food everyday. Heck, I don’t eat Vietnamese food daily. ...Read More
THAI SPICY TOFU AND BASIL STIR-FRY (PAD KA-PRAO) RECIPE July 31, 2019 By Andrea NguyenLeave a Comment
Salty, spicy, pungent and slightly sweet chicken stir-fried with tons of basil is one of the first dishes I ate on my initial visit to Bangkok in 1991. I’ve loved it ever since. The best rendition of pad ka-prao (aka phat kaphrao) that I’ve made is based on a recipe from Andy Ricker’s Pok Pok cookbook. Ground chicken is used and all the nubbins of protein absorb the fish sauce and soy sauce seasonings super well Last week, after playing around with vegan fish sauce, I experimented with ...Read More
VEGETARIAN FISH SAUCE BUYING GUIDE AND A DIY RECIPE July 26, 2019 By Andrea Nguyen4 Comments
I have an extensive collection of fish sauces but it hasn't included fish-less fish sauce simply because vegetarian fish sauce has always disappointed me. However, I recently came across two brands of pineapple-based vegetarian fish sauce that looked promising. They were about $4 each at the Green Farm market in Orange County’s Little Saigon in Southern California. I’ve since seen them at other Viet markets such as Shun Fat (Thuan Phat). The relatively high price point signaled a ...Read More

Along with recipes in my cookbooks and elsewhere, here are fourteen recipes from Viet World Kitchen to further ...Read More

Okay, so autumn doesn’t officially arrive until September 23 but forgive me for labeling it with an earlier date. After being busy with book-related travel, I’ve been missing teaching on my own turf. I’m very excited about returning to it, and just opened registration for fall classes. People have been emailing to ask and I’ve been apologizing for having been too busy to teach. But here are three opportunities for us to tinker, cook and eat together. And, yup, people snap lots of proud food ...Read More
LEMONGRASS 101: HOW TO BUY, PREP, AND GROW THE AROMATIC STALKS June 27, 2019 By Andrea Nguyen6 Comments
There’s something about lemongrass that’s incredibly appealing. A relative of citronella, the fibrous stalks impart a delicate perfume similar to lemon verbena, but it also has a refreshing citrusy, sweet quality too. In Vietnamese, lemongrass is called xả (say “sahh?”), and it’s required for many southern and central Viet dishes. Lemongrass is also common in other Southeast Asian cuisines so it is a super useful ingredient. One major lemongrass problem issue that people run into is how to ...Read More
