VEGAN RASPBERRY CREAM CAKE Preheat fan oven to 160°C / 320°F (regular oven to 180°C/356°F). Grease a round cake baking tin (diameter about 20 cm/8 inch). In a bowl, mix together the dry ingredients: flour, cacao powder, baking powder, salt and sugar. In a separate bowl, mix oil and soy milk. Add wet ingredients to dry ingredients and mix well to combine. VEGAN GREEN AVOCADO SMOOTHIE Instructions. Peel and slice banana, and put into a blender. Cut avocado in half, scoop out the meat with a spoon and add to blender. Add also a cup or a handful of baby spinach, 1/2 cup yogurt (we used coconut yogurt) and juice of half a lemon. Pour in about a cup of water (more if you want a thinner smoothie). PROBIOTIC VEGAN CASHEW SPREAD {PLANT-BASED} Instructions. Pre-soak cashew nuts in 1 cup water for 4-6 hours. Once done soaking, discard the water and wash the nuts thoroughly. Add cashew nuts to a high speed blender. Add a dash of water and a pinch of salt and mix until smooth. Depending how thick or thin you want your spread, add more water while mixing. NO-BAKE ALMOND PULP ENERGY BITES {VEGAN} Take a cup of leftover almond pulp (from making almond milk, or 1 cup pre-soaked, peeled and chopped almonds) and 1 cup soft dates and pulse together in your food processor to break the ingredients apart. Add desiccated coconut, cacao, melted coconut oil, a slice of orange, and a pinch of salt. Blend in food processor until thoroughly combined TOMATO SOUP FROM FRESH RIPE TOMATOES Bring to a boil, then lower the heat and cook for about 15 minutes. When the tomatoes are cooked, remove the pot from heat, then remove the bay leaves and blend into a smooth soup with a stick blender.
