EASY VEGAN RECIPES WITH BLACK BEANS ~ VEGGIE INSPIRED Stovetop Directions. Soak them first, see above. Use a large pot and cover the beans with water by 2 to 3 inches. In a clean kitchen cloth, very sturdy paper towels, or cheese cloth, squeeze out the liquid from the shredded potatoes and zucchini. VEGAN DESSERT RECIPES FEATURING CHICKPEAS ~ VEGGIE INSPIRED Don’t forget to save the liquid from a can of chickpeas (or the liquid from cooking the beans from scratch) – this bean liquid is called aquafaba and can be used in place of eggs in many recipes, like my Chocolate Chip Zucchini Bars, Chai Spiced Layer Cake, and my Healthy Peanut Butter Banana Bread. In a large mixing bowl, sift together the flour, sugar, baking powder and salt. Stir in the diced peaches and set aside. In a small bowl, whisk together the QUICK PICKLED RED ONIONS RECIPE + VARIATIONS! ~ VEGGIE Recipe ingredients: red onion, water, vinegar, sugar, and salt. Ingredient notes and substitutions. Onions ~ I use red onions for this recipe, but white and yellow onions can also be pickled. Be sure to slice the onion thinly and uniformly. SUGAR SNAP PEA SALAD (GLUTEN FREE, OIL FREE) ~ VEGGIE INSPIRED How to make the recipe. Cut the sugar snap peas in half and place them in a mixing bowl (1). Add the sweet green peas (2), chopped cucumber (3) and diced red onion (4). Add the chopped fresh herbs and dressing and mix well to combine. Serve immediately or chill until ready to BUTTERNUT SQUASH MAC AND CHEESE (SOY FREE, GLUTEN FREE, VEGAN) Instructions. Add butternut squash, onions and cashews to a pot and cover with water by at least an inch or two. Bring to a boil, turn down heat to medium and simmer until vegetables are tender (about 15 minutes or so). Meanwhile, cook macaroni noodles according to packagedirections.
