Back to basics with easy seasonal recipes. Uproot Kitchen was born out of a need to create. I was going to the same places each day, driving the same routes, and working the same job. RECIPES | UPROOT KITCHEN Back to Basics January 2021 Shallot Mashed Potatoes Edible DIY: Homemade Hot Sauce Celery Root and Fennel Soup Bison Meatloaf Harvest Squash Flatbread with Goat Cheese and Balsamic HoneyBISON MEATLOAF
Instructions. Preheat the oven to 350 degrees and line a baking sheet with parchment paper. Mix together all the meatloaf ingredients and portion meatloaves into 6 patties. Use your hands to form them evenly and flatten slightly to ensure consistent cooking. Bake the meatloavesfor 15 minutes.
HOW TO MAKE HOMEMADE MILD ENCHILADA SAUCE This Homemade Mild Enchilada Sauce is the perfect base for a variety of meals, and made with just a few ingredients you likely already have on hand! I love making enchiladas. They are a simple and healthy way to put together a meal that you can enjoy as leftovers or to take for lunch. Prior to trying to make my own mild enchilada sauce, I was purchasing the canned version. SPICY ARUGULA & CHICKEN SOUP Add thyme, oregano, diced tomatoes in tomato juice, vegetable broth, and red pepper flakes. Simmer for 10 minutes or longer. Using a slotted spoon, remove the cooked sausage into a bowl and set aside, leaving the juices in the pot. This was such an easy dessert to pull together, and I was immediately impressed by the flavors of the crust and the filling. HOW TO: BROCCOLI PIZZA CRUST Measure out 2 packed cups of broccoli rice. In a saucepan, begin heating ¼ cup water until steaming. Add the broccoli rice, and then turn off the heat and cover the pan for 5 minutes to let it steam. HEARTY SLOW COOKER LENTIL CHILI Drain and rinse the pinto and dark red kidney beans. Remove the ribs and seeds of the jalapeño and mince. I love making enchiladas. They are a simple and healthy way to put together a meal that you can enjoy as leftovers or to take for lunch. Prior to trying to make my own mild enchilada sauce, I was purchasing the canned version. ITALIAN CHICKEN SAUSAGE SOUP WITH SPINACH Add oil to a soup pot and brown the Italian chicken sausage, breaking it up well, for 5-8 minutes on medium heat. Stir together oat flour, whole wheat pastry flour, cinnamon, baking powder, baking soda, and salt. In a separate bowl, stir together brown sugar and melted coconut oil (measured whensolid).
LEMON GARLIC HADDOCK Preheat the oven to 350 degrees. Use a fork to mash the garlic as much as possible after mincing. In a small bowl, mix together the garlic, olive oil, lemon juice, salt and pepper. HOW TO: PINTO BEANS, 3 WAYS Sort dry beans and remove any pebbles or overly dried beans. Cover pinto beans with water and soak for 8 hours or overnight. Uproot Kitchen was born out of a need to create. I was going to the same places each day, driving the same routes, and working the same job. I realized that food allowed me to break out of the routine. I infused creativity into my meals and it felt so good to use that sideof my brain.
I began using my free time to create recipes: easy, simple, affordable dishes that fit both my budget and my schedule. Uproot became an outlet to share what I was working on and to connect with people who were also thinking about food in a different way – food that is uncomplicated, and makes healthy eating actually taste good. In the six years I’ve been doing this, the blog has grown and matured, but the root intention (all puns intended) is the same: I see food as a way to connect us. It brings us all to the table each day, giving us multiple opportunities to engage with one another, to invite our friends, families and neighbors into our lives. Food can be the catalyst for so much more than nutrition. It can be the foundation forcommunity.
