LANTERN CHILI (DENG LONG JIAO) Deng long jiao, or lantern chilies, are fat and round and moderately hot. These are deep-red, fresh and fragrant. They are used to bring a visual wow to dishes such as dry pot and Chongqing chicken (la zi ji). There are several varieties of lantern chilies, and this one YIBIN RAN MIAN 燃面 (BURNING NOODLES FROM YIBIN, SICHUAN Add ground chilies to a heat-proof jar or bowl. Heat rapeseed oil (or Chinese peanut oil) over a medium heat until it begins to lightly smoke, at about 450°F, and cook for 2 minutes. (This step mellows its vegetal taste, and is not necessary for a neutral oil.) Turn off heat and let oil cool down to about 300°F. NO SWEET SOUR: YUNNAN MUSHROOM HOT POT (HUOGUO, 火锅) Bring back to a boil, then simmer for five minutes. Season with salt to taste. Transfer the stock base into the hot pot. Heat a wok over high heat until hot and add 2 tablespoon canola or peanut oil. When oil is hot, add ginger and garlic COOKING WITH PIXIAN DOUBANJIANG: SICHUAN SAUCE FOR STIR Instructions. In a small bowl, mix the sauce: doubanjiang, oil, chili flakes, ground Sichuan pepper, dark brown sugar, soy sauce and sesame oil. In a separate bowl, marinate the chicken or beef in Shaoxing wine. Heat wok until very very hot, add a couple tablespoons of oil and swirl around the wok. SICHUAN'S NATURALLY FERMENTED PICKLES (PAO CAI) Leave green beans whole. I just received my spice order. My wife works in China. The last time she came home, she brought me some HanYuan peppercorns. They were the best I've ever had...until now. I always test peppercorns the same way; put one bud in my mouth, chew on it a few times, then remove it. It's been about 10 minutes now, and my lips and tongue are stilltingling.
