Cover and refrigerate wings for 4 PORK & PRAWN POTSTICKERS (AKA ASIAN DUMPLINGS) In a large mixing bowl, combine the cabbage, garlic, ginger, pork and prawns. In a small mixing bowl, whisk together the soy sauce, sherry, sesame oil, pepper, salt, and sugar. Add soy sauce mixture to pork and prawn mixture, and stir to combine. Cover with plastic wrap and let rest at room temperature for 30 minutes. SPICED APPLE CIDER BRINED ROAST CORNISH GAME HENS WITH In a mixing bowl, combine the cold apple cider, salt, cinnamon stick, allspice berries, and whole cloves. Stir until the salt dissolves. Place the game hens, breast-side-down, into the brine. Seal tightly with plastic wrap, and refrigerate for at least 6 hours or overnight. PERFECT CLASSIC PUMPKIN PIE + 10 UNCOMMON VARIATIONS In a large bowl, add the eggs and whisk until well blended. Add the pumpkin puree, cream, and maple syrup. Whisk until smooth, but try not to incorporate a lot of air into the custard. Add the brown sugar, vanilla, cinnamon, ginger, nutmeg, salt, white pepper, and cloves, and whisk to incorporate. The recipe that follows is from the German-Swiss-Austrian-Hungarian tradition; however there is no reason to make only one type of spaetzle or to stay within the traditional boundaries. SAUTEED CHICKEN THIGHS WITH SAVORY HERBS & GARLIC ALA An instant-read thermometer should read 180ºF. Remove chicken to a heated serving platter, and keep warm in a 300ºF oven. To make sauce: Raise heat under skillet, add wine, and reduce by half. In a small bowl, combine egg yolk and cream, and whisk together thoroughly. SPICED RHUBARB CHUTNEY Reheat the liquid and add the rhubarb and raisins. Bring to a slow simmer. Simmer slowly, stirring frequently, until the sauce thickens and the liquid reduces by half, about 10 minutes. Remove from the heat, and stir in the vanilla. Let cool, put into a storage container, cover, and refrigerate until cold. Makes about 2 cups. What finally pushed me over the edge was the Candied Lemon Sage Tea Cake I am working on. To give it an over-the-top lemon flavor and a little texture besides, it needed chopped candied lemon peel. I made a double batch, so I will also be trying it out in Candied Lemon Brown Butter Friands and Candied Lemon Thyme Shortbread Cookies over thenext week.
HOMEMADE RICOTTA CAVATELLI PASTA 2 large eggs. Shaping. unbleached all-purpose flour in a shaker. rice flour in a shaker or fine mesh sieve. In a large mixing bowl, whisk together the flour, rice flour, and salt. In a small mixing bowl, whisk together the ricotta and eggs. Stir into the flour mixture toform a shaggy mass.

ALMOST YOTAM OTTOLENGHI’S MEJADRA (SPICED RICE & LENTILS) To prepare rice, set a medium saucepan or stovetop casserole over medium heat, and add oil and rice. Toss rice briefly to coat with oil. Add 4-5 teaspoons Mejadra Spice Blend, sugar, and salt. Stir to distribute. Add cooked lentils, optional currants, and water. Bring to a simmer, cover, and simmer on low heat for 15 minutes. FAVA BEAN GREENS, WALNUT & ORANGE PESTO Every year, I create a couple of new pestos. When I encountered fava bean greens at the Portland Farmers Market in early April a couple of seasons ago, my first thought was, naturally, PESTO. The THE WONDERFUL WORLD OF FRESH PESTO Is there anything in the world of food more appealing than a gloriously fresh pesto, with its vivid green color and bright, bold flavor? I can’t think of anything more wonderful in early spring CANNELLINI BEAN SOUP WITH ITALIAN SAUSAGE, FINGERLING POTATOES &BROCCOLI RAAB
The taste of the spicy Italian sausage really comes through in this homey, hearty soup, as do each of the other individual flavors and textures. It's October, so I've shifted to fall ingredients OLD WORLD SPAETZLE: THE NEW PASTA? I grew up eating spaetzle. But I thought it was pasta. To be even more specific, I though it was NOODLES. It took a curious turn of events to clear this confusion in my mind. Grandma Mary loaded CURRIED CELERY SOUP WITH GREEN APPLE, COCONUT & LIME Buttery yellow, silky smooth, gently curried, with tart green apple to balance the earthy sweetness of the celery. Heavenly mélange. If you do a quick web search on Celery Soup Recipe, you’ll find 3 FRESH STRAWBERRY-TOMATO DESSERT SAUCE Strawberries and tomatoes. Together. Take the leap. I did a search on the web before I created this sauce, just to make sure it didn’t already exist. And low and behold, I did find one, but onlySTRAWBERRIES!
STRAWBERRY BASIL SOUR CREAM GELATO Strawberries and fresh basil are overflowing Portland farmers markets. Gelato time! Portland, Oregon is ice cream and gelato country.
