SOUR CHERRY CHOCOLATE SCONES sifted spelt flour (or red spring wheat flour or your favourite all-purpose flour) organic cane sugar. baking soda. sea salt. coconut oil. sour cherries (or raspberries, cranberries, or other in-season fruits) dark chocolate - use vegan if needed. plant-based yogurt (or regular, unsweetened yogurt) plant-based milk. SPICY PEANUT SOBA NOODLES Bring a large pot of salted water to a boil over high heat. Add the soba and cook until almost al dente, 7 to 10 minutes. A few minutes before the noodles are ready, add the green beans. Let boil for 3 minutes more. (If using snap peas, cook only one minute). APPLE VANILLA CASHEW BUTTER This recipe is by no means a traditional apple butter, in which you cook down apples for a long time until they transform into a buttery spread. I'm instead going for a super simple throw-in-the-food-processor version with soft cashews blended in. The TAHINI HOT CHOCOLATE Here’s a cozy mug of hot chocolate to warm you up during these freezing winter days. This version is slightly sweetened with dates, with just enough chocolate to make it indulgent but not heavy, and a subtle tahini touch to add a bit of richness and creaminess. A delicious sip that feels like a warm ROASTED SWEET POTATOES, SPICED LENTILS & CASHEW LIME SAUCE This is the kind of meal I love to eat when transitioning from Winter to Spring, as it’s both nourishing and grounding from the roasted sweet potatoes and spiced lentils, but bright and fresh from the lime sauce, pickled onions and fresh cilantro.
