Welcome to The Fitchen! Our beloved, foodie corner of the Internet. This is the space that we carved out to share the nutritious, simple recipes that help us (and you!) stay fit in the kitchen. SIMPLE CAST IRON SKILLET RATATOUILLE FROM THE FITCHEN Instructions. Preheat the oven to 375º. Add the ingredients for the sauce into a blender and blend until smooth. Save ¼ of the sauce for later and pour the rest into the cast-iron skillet. Spread around to smooth it out. Wash all of the veggies and slice them very thin – less than ¼" thick is best. Start arranging the slices in a spiral QUINOA MUSHROOM MEATBALLS FROM THE FITCHEN Add garlic and mushrooms. Saute 5-8 minutes until the mushrooms are tender (don’t overcook to the point where they’re soggy!) Remove from heat and allow to cool. Preheat the oven to 400ºF and line a baking sheet with parchment. Add the quinoa and the mushroom + onion + garlic mixture to a food processor. Pulse until well combined. 30-MINUTE CREAMY CAULIFLOWER AND POTATO SOUP Add broth to the pot and stir. Gently add potatoes, cauliflower, and rosemary. Bring the pot to a boil, then reduce to a simmer. Add sea salt and pepper. Cook for 20-30 minutes until potatoes and cauliflower are soft – test with a fork for tenderness. Remove the PEANUT BUTTER PUPCAKES FROM THE FITCHEN Pupcakes. In a large bowl, whisk together dry ingredients. Add honey, peanut butter, apple sauce, and egg and stir until well combined. Preheat oven to 350º and lightly grease a mini muffin tin. Fill the ¾ full and bake 12-15 minutes. 5 INGREDIENT CHOCOLATE ALMOND ENERGY BALLS FROM THE FITCHEN Empty the date paste into a large bowl. Add cocoa powder to the date paste and use your hands to work it in. Add coconut milk and continue mixing. Lastly, add cashews, almond flour and sea salt and continue kneading until combined. Roll the cocoa-date-nut mixture into small balls about 1-inch in diameter. Then roll each in the almond meal and BROCCOLI SLAW AND CHICKEN STIR FRY FROM THE FITCHEN Instructions. Add onion and sauté for 3-5 minutes, until they are softened and translucent. Add garlic and sauté for 2 minutes. Add mushrooms and sauté for 5 minutes. DAIRY FREE POTATO KALE SOUP FROM THE FITCHEN Add coconut milk, vegetable broth, potatoes, salt, and pepper. Bring to a boil and cook 5 minutes. Decrease heat to simmer and cover. Simmer for 20 minutes. Scoop out 2 cups of the soup from the pot and add to a blender. Give it a quick pulse, then pour back into the__
