MEXICAN STREET CORN CUPS (ESQUITES) The first time I ever had Mexican Street Corn Cups was at a food and wine festival. I thought to myself, what a genius idea! Turns out this has been around for many many years! HOW TO MAKE LEMON PESTO Instructions. Add all ingredients into a food processor or high speed blender. Pulse 20-30 seconds, stopping and scraping down the sides in between pulses. If it’s too thick, add a little more EVOO to your

desired texture.

SPIRALIZED SWEET POTATO FRIES Preheat oven to 400 degrees. Wash Sweet Potato. Using the medium blade on your spiralizer, spiralize the Sweet Potato. Toss the Sweet Potato with Olive Oil. Place the Sweet Potato on a baking sheet lined with parchment paper. Sprinkle with Sea Salt, Nutmeg, and Pepper. Bake 20-25 minutes to desired crispiness. HOW TO GRILL THE PERFECT RIBEYE Clean grill grates with a quality grill brush before cooking. Preheat grill to 450 degrees. Place Ribeye over direct heat and cook 4-5 minutes each side for medium rare. Remove from grill, place on a platter and cover with aluminum foil. Let the Ribeye rest for 10

minutes.

EASY SHRIMP RISOTTO

Instructions. In Dutch Oven add 2 Tbs EVOO, Shrimp, Salt, and Pepper. Turn heat to med-high. Saute Shrimp about 3 minutes until they turn nice and pink on all sides and are cooked all the way through. Remove and set aside in a separate bowl. Add the other 2 Tbs EVOO, Garlic, and Shallots. BLACKENED MAHI MAHI SANDWICH Instructions. In a small bowl mix together Paprika, Cayenne, Garlic Powder, Onion Powder, Oregano, Salt and Pepper. Spread mixture evenly over each Mahi Mahi fillet coating all sides. Add Coconut Oil to a large cast iron skillet, heat on med/high heat. When oil is melted and shimmering add Mahi Mahi fillets. SPIRALIZED SWEET POTATO FRIES Preheat oven to 400 degrees. Wash Sweet Potato. Using the medium blade on your spiralizer, spiralize the Sweet Potato. Toss the Sweet Potato with Olive Oil. Place the Sweet Potato on a baking sheet lined with parchment paper. Sprinkle with Sea Salt, Nutmeg, and Pepper. Bake 20-25 minutes to desired crispiness. SPINACH TOMATO AND RICOTTA WHITE PIZZA When oil is shimmering add Garlic and sauté 1 minute. Add Spinach and sauté 3-4 minutes until Spinach has wilted, set aside.
