CHINESE STYLE SHRIMP IN GARLIC SAUCE There's something fun and extra challenging about recreating favorite Chinese food takeout dishes at home. Maybe it's the extra difficulty of trying to find and choose the ingredients from the shelves of the Asian market or maybe it's because of the exotic nature of some of the ingredients. Either way the end result is great- NO TORTILLA CHEESY CHICKEN ENCHILADA BAKE The chicken forms the base layer of the bake. Next, saute some peppers and onions, until they are starting to get soft. They will continue cooking in the oven so cook them to about 60% soft. Once they are cooked, spread them over the chicken and top with the enchilada sauce. Cover with shredded cheddar cheese and some sliced green onion. MARSCAPONE CREAMED SPINACH Add the marscapone and let that melt and incorporate into the butter. It creates a nice, thick, creamy sauce. I added some half and half to “lighten” it up some. Add the spinach to the cream sauce. Once it’s all combined, transfer it to a small baking dish and top with parmesan cheese. Bake for about ten minutes or until its bubbling. CRAB TOPPED GRILLED FISH (MAHI MAHI AND A bit of oil and salt and pepper for the fish and balsamic along with the oil salt and pepper for the asparagus. Swordfish on the left, Mahi Mahi on the right. CHICKEN | STARVING KITTEN Thanks to my sis we now receive Bon Appetit magazine! This recipe comes from the January 2011 issue. I adapted it in a couple of ways. First, I nixed the pomegranate relish that was supposed to accompany it and secondly, I used chicken thighs instead of making kebobs withbreast meat.
TOMATO, ONION, AND BLUE CHEESE SALAD 1 tablespoon wine (red or white) vinegar. 1 teaspoon salt. 1/2 teaspoon freshly ground black pepper. Directions: Combine tomatoes, onion and blue cheese in a small bowl. In a separate bowl, combine last four ingredients and whisk to make dressing for salad. Pour over tomato, onion, and blue cheese BRAISED WHOLE CHICKEN WITH BREAD STUFFING & BACON RECIPE The Stuffing: Melt the fat or butter in a saucepan and add the onion. Cook for about 7 minutes or until translucent. Transfer a medium bowl and toss with the ham, parsley and bread. Toss to evenly distribute the ingredients. Season with salt and pepper. Heat the oven to 325. FRA DIAVOLO SAUCE RECIPE Fra Diavolo Sauce Recipe. Combine all of the above and let simmer for at least 30 or minutes – the longer the better up to 6+ hours as long as stirred regularly. About 30 minutes before ready to serve add 16 oz of heavy cream, when the mixture becomes hot, add the uncooked shrimp and stir just until they become pink (about 10 minutes or less IRISH ALE BRAISED BEEF For St. Patty's day I made an Irish beer beef stew. Originally I wanted to make stout braised short-ribs, but it turns out short-ribs were a little more pricey than I originally thought. We ended up purchasing a single bottle of Smithwick's (an Irish red ale) and some beef shanks and enjoyed every bite. I JALAPENO AND BACON MAC N CHEESE Add the bacon to the sauce mixture a bit at a time while stirring over low heat. Once the cheese is melted, turn the flame off. Then add the drained bacon, assuming that a few pieces have already disappeared by this point. Stir in the cooked and drained noodles and then pour the whole mixture into a casserole dish. ROASTED CHICKEN ENCHILADAS SUIZAS STACKED CASSEROLE Whew that title is a mouthful a delicious mouthful at least! We received tomatillos two weeks in a row from our CSA and felt inspired to make some yummy green-sauce enchiladas. I searched the interwebs and found this recipe. I liked the idea of "suizas" or Swiss cheese flavored enchiladas and though I typically shy TEDDY FOLKMAN’S MOULES FROMAGE BLEU (MUSSELS WITH BLUE This is a slight adaptation of Teddy Folkman's recipe, but it is nearly identical. 2 pounds of mussels 4 tablespoons oil blend (2 tablespoons olive oil, 2 tablespoons canola oil) 1/2 cup of diced bacon 1/3 cup of thinly sliced shallots 1/2 cup crumbled blue cheese2/3 cup dry

I recently ‘got into’ Lara Bars. I like to have a late afternoon snack on the days I work late, that has enough staying power to keep me full ’till my (late) dinner and align with my dietary goals. I’ve been really digging the ‘peanut butter cookie’ and ‘cashew cookie’ lara bars, in particular. Though that may sound like a delicious cookie treat, in reality these bars have little in common with the cookies they are named after. Check out the ingredients: PB cookie- peanuts, dates; cashew cookie bars- cashews, dates, pinch of sea salt. Hmm. Pretty simple ingredient list for a $1.50 bar… naturally my mind got to thinking– couldn’t I justmake these at home?

In a quest to cut/limit sugar and in general eat a little healthier, I have been adapting my diet to be more paleo-esque. I don’t know that I could ever or would ever want to go totally paleo because I love cheese too much, but when I can cut a corner here and there and aspire to paleo-ness I like to do it. Typically, low-carb or paleo adaptations of things are good if you’re lucky but a far cry from the original item you know and love. love me some wings! We have a turkey deep fryer that we used for Thanksgiving and since there is so much costly leftover oil, I keep it around and fire it up a few more times. Most of those coincide with football watching and fried finger foods. This was a deviation from classic buffalo or garlic parmwhich we have
made before and as much as I love good ol hot buffalo I welcomed some new flavors. This recipe was cool since it uses fresh ingredients like ginger and garlic.
