SEITAN IS MY MOTOR • THE VEGAN BAKING BLOGRECIPESENGLISHSUGAR-FREEWHAT ABOUT VEGANISMCONTACTSTREUSEL PLUM CAKE WITH COCOA CRUMBS by Constanze March 13, 2021. These soft and crispy cinnamon buns are a special treat hailing from Hamburg, Germany. They are made with a yeast based laminated dough and filled with vegan butter, sugar and cinnamon. These pastries are very moist and crispy at the same time. The recipe does take some time, but it’s worth it! COMPARING (GERMAN) FLOURS • SEITAN IS MY MOTOR In Germany we use soft wheat for all flours. Hard wheat has more protein than soft wheat and it can also absorb more water. These properties make a big difference when baking bread. You should keep them in mind. On many comparison sites you can find online, German type 812 flour is compared o bread flour. SCHROTBROT (WHOLE RYE BREAD) • SEITAN IS MY MOTOR The evening before you plan to bake the bread, combine 300 g of cracked rye berries, with 50 g of active sourdough starter and 200 ml of water. The next morning mix rye berries, sourdough mixture, 100 ml water, and 10 g salt. Knead until combined. Place in a VEGAN STROOPWAFELS (SYRUP WAFFLES) • SEITAN IS MY MOTOR Preheat your waffle iron. To make the syrup combine all ingredients in a saucepan and bring to a boil. Cook over medium heat for 3-5 minutes, or until the syrup has firmed up a bit. Set aside. Now place one of the dough balls in the middle of the waffle iron and over medium heat, cook according to machine instructions. TEBIRKES (DANISH POPPY SEED ROLLS) • SEITAN IS MY MOTOR To make the dough, place the flour in a large bowl. Add sugar and yeast and pour in cold water. Let sit for 10 minutes. Add salt and knead the dough until it is smooth. Add some more water if it's too dry. I knead by hand and it takes about 10 minutes. Place the dough in a bowl and cover with plastic. FRANZBRÖTCHEN (NORTHERN GERMAN CINNAMON BUNS) • SEITAN IS Place on a lightly floured surface and roll into a rectangle. (Approx. 50 x 35 cm) Cut cold margarine into very thin strips and place on top of the dough. Mix sugar and cinnamon and sprinkle over the dough. Also sprinkle dark chocolate on top. Tightly roll the dough up, starting with the 50 cm side. THE ULTIMATE VEGAN CROISSANT • SEITAN IS MY MOTOR Instructions. To make the dough, add flour to a large bowl and make a well in the centre. Crumble yeast into the well, add sugar and water. Let sit for 10 minutes, or until the yeast has started to bubble and

looks frothy.

QUICK TOMATO MINT SALSA (PLUS SANDWICH IDEA) • SEITAN IS Instructions. Place onion and garlic in a food processor and pulse until roughly chopped. Add remaining ingredients and process until the tomatoes are all chopped up and have released their juice. This sauce should still be chunky, so don't overdo it with the processing. JERUSALEM ARTICHOKE (SUNCHOKE) AND ASPARAGUS PIZZA Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper. Flour your working surface. Divide the dough into six pieces and roll into rounds or ovals. Divide the spread between the pizzas and top with asparagus and jerusalem artichoke slices. Brush

In a bowl, combine flour, sugar, baking powder, and baking soda and mix well. Stir in remaining ingredients except for pears. Pour the batter into the muffin tins and press pears into the batter. RYE SOURDOUGH STARTER FROM SCRATCH • SEITAN IS MY MOTOR Day 1: Mix 50 g of whole rye flour with 50 g of water. Loosely cover and let sit in a warm place. Vigorously stir the mixture once a day to beat in air. Day 2: Add 50 g of rye flour and 50 g of water and mix to combine. Vigorously stir the mixture once a day to beat in air. STREUSEL PLUM CAKE WITH COCOA CRUMBS Pour the plum purée into the pan. Prepare the crumbs by combining all ingredients except for cocoa powder. Form into crumbs and sprinkle half over the plums. Add cocoa powder to remaining crumble dough, knead again and sprinkle over cake once the cocoa is incorporated. Bake for 30 minutes or until the crumbs are golden brown. EASY RHUBARB STREUSEL CAKE First, roast the rhubarb. Place the bite-sized pieces in a shallow baking dish. Mix with sugar. Place in your oven, on the middle rack. Turn oven to 200°C (no need to preheat) and roast rhubarb for about 25 minutes. Leave the oven on, so you can put in your cake later. While the rhubarb is in the oven prepare the crust. SIMPLE BUCKWHEAT FRIES & EINKORN PANCAKES oil for frying. Combine all pancake ingredients in a bowl and mix well. Let sit for 10 minutes. Heat a pan over medium heat and add oil. Pour about 2-3 tablespoons of batter into the pan and fry until golden brown. Flip and cook the other side.
