BEEF, BACON & MUSHROOM CANNELLONI Preheat oven to 200°C. Place porcini mushrooms into a bowl and cover with boiling water. Leaving mushrooms for 20 minutes and then remove mushrooms from the water. Keep remaining porcini water. Next heat oil and butter in a frying pan and fry onion and garlic for 3 to 4 minutes. Add button, oyster and porcini mushrooms to the pan.CREAMY WAGON WHEELS
Drain, reserving one ladle full of pasta water. Heat olive oil in a saute pan over a low heat. Add onion, garlic and bacon, stirring to combine. Cover and cook for 10 minutes or until onion are soft. Add stock, peas, corn and zest, increase heat to medium and bring to the boil, cook for 3-4 minutes. Add cream and parmesan, stirring untilsauce
TUNA CANNELLONI
Lightly grease a 5cm deep, 25x30cm (base) ovenproof baking dish. Place peas in a saucepan of boiling water and cook for 2 minutes. Drain and cool slightly. In a large bowl, combine tuna, corn, peas, ricotta, cream cheese spring onion and pepper. Spread 1 cup of tomato sauce into the dish. Spoon 4tbsp of filing into the middle of eachcannelloni
SLOW BRAISED VEAL RAGU RIGATONI Method. In a large pot, heat olive oil on medium heat. Add veal and seal meat until browned. Remove meat and add onion, carrot, celery, bay leaves and garlic in pot and cook for 5-10 minutes or until soft. Add veal, sage, olives and wine into the pot and simmer for 2-3 minutes.
