Located in beautiful Park Plaza in Mexico City, Toro offers the choice of private dining amidst a vast collection of wines or a semi-private experience in the modern yet rustic restaurant or its extensive garden GRILLED CHICKEN WITH MOLE BBQ SAUCE Grilled Chicken with Mole BBQ Sauce Serves 6 to 8 For the Mole BBQ Sauce: 1 cup (315 g) tomato ketchup 1/4 cup (50 g) packed light brown sugar 2 ounces (55 g) unsweetened chocolate, coarsely grated 1/4 cup (60 ml) mesquite-flavored liquid smoke 4 PORK BELLY "AL PASTOR" Deglaze with sherry vinegar and add remainder of ingredients. Cook for about 15 minutes at a simmer until chiles and garlic are soft. Transfer to blender and puree until smooth. Remove from blender and cool in the refrigerator. Once cold, rub adobo all over pork belly until completely covered. CHEF FEATURE: STEVE WAN + PILONCILLO PRAWNS 1 cup mayonnaise. 3 limes (zested and juiced) 4 morita chiles (toasted and seeded) 1 teaspoon salt. 1 teaspoon black pepper. Directions: Fill a pot halfway with canola oil and preheat to medium high heat. Place wonton skins on a board. Cut cream cheese into ½ inch cubes and place one in center of each wonton skin. Place 1 tsp of guava paste onto each wonton skin. Place water on edges of wonton skin and fold into a triangle shape, making sure the edges are sealed. CHEF FEATURE: STEVE WAN + PILONCILLO PRAWNS 1 cup mayonnaise. 3 limes (zested and juiced) 4 morita chiles (toasted and seeded) 1 teaspoon salt. 1 teaspoon black pepper. Corn starch (as needed) Directions: Break up the Piloncillo into smaller pieces, and combine with water. Bring to a boil to melt piloncillo. Subscribe to our newsletter for more of Chef Sandoval's recipes, tips and the latest from our restaurants: GRILLED CHICKEN WITH MOLE BBQ SAUCE Grilled Chicken with Mole BBQ Sauce Serves 6 to 8 For the Mole BBQ Sauce: 1 cup (315 g) tomato ketchup 1/4 cup (50 g) packed light brown sugar 2 ounces (55 g) unsweetened chocolate, coarsely grated 1/4 cup (60 ml) mesquite-flavored liquid smoke 4 BEEF & CORN ANTICUCHO WITH AJI AMARILLO SAUCE kosher salt. Other: 3 ears of corn (husked and cut crosswise into 4 chunks each) 4 long metal grilling skewers. Directions: Make the marinade: Puree the aji panca, oil, soy sauce, vinegar, sriracha, garlic, oregano, cumin, salt and pepper together in a blender. VIEW FULL LIST OF RESTAURANTS ------------------------- ABOUT CHEF RICHARD SANDOVAL Growing up in Mexico City, Richard Sandoval would join his grandmother in the kitchen and gather around her large table with family to enjoy lively Mexican feasts prepared from scratch. From his grandmother, he learned to respect fresh, authentic, ingredients and create the vibrant flavors that turned family dinners into celebrated events. Meanwhile, his restaurateur father - owner of Madeiras in Acapulco and Villa Fiore also in Acapulco - imparted lessons in service and restaurant management. Sandoval, who was once a professional tennis player and had toured the world participating in prestigious matches, had such a passion for food that he decided to enroll in the Culinary Institute of America. Upon graduation, he gained the attention of New Yorkers with his contemporary French restaurants, Savann and Savann Est. Soon, though, he returned to his first love - the food of his childhood and in 1997 opened Maya, his flagship modern Mexican restaurant in New York. During the past 18 years, Sandoval's career as a Chef-Restaurateur has evolved to include serving as a culinary consultant, television personality, cookbook author and brand ambassador. Sandoval has developed menus for American Airlines First Class cabin, as well as many of the world's leading hotels. He is equally passionate about tequila and has curated one of the largest collections in North America and the Middle East and aspires to educate diners on their quality and diversity. When not cooking, Sandoval is passionate about training the chefs of the future. He supports their growth on the Board of Trustees at his alma mater, the Culinary Institute of America and has recently received an honorary doctorate from Johnson and Wales.
