BREAKFAST & DINNER SIDE DISH MENU IDEAS/ PLANNER HEALTHY RECIPES LUNCH RECIPES Main Sides Condiments Rice BY INGREDIENT SUMMER RECIPES MUNCH ON SWEETS & DESSERTS FESTIVAL RECIPES BAKING EASY BRINJAL SABZI RECIPE Easy brinjal sabzi method: 1. Chop onion, garlic and green chilli finely, capsicum, tomatoes roughly, brinjal into cubes. Make sure brinjal is not having any water. 2. Heat a pan with sufficient oil to shallow fry brinjal. Add cubed brinjal carefully. HOW TO MAKE CURD AT HOME, HOMEMADE CURD RECIPE How to make Indian style homemade curd: Boiling milk. Start heating 1 litre milk in a milk pan. It should be large enough to hold the overflowing milk. Keep stirring. Keep stirring occasionally in the beginning. As you see steam rising along the spoon you stir, be careful, your milk is about to boil. EGGLESS BLOOMING ONION RECIPE Carefully separate each petals.Take maida in a mixing bowl. Coat onions in it thoroughly. Set aside. Add rest of the ingredients except oil to the bowl and make a batter. Coat the onions in batter. Dust it with bread crumbs. Heat oil side by side for deep frying. Once oil is hot, deep fry the onions one by one. Cook in medium flame. BLUE LATTE RECIPE, BUTTERFLY PEA FLOWER LATTE Place 10 flowers of butter fly pea in a tea pot. Pour one cup hot water to it. Keep aside. Let it steep for 5 mins. The color will turn deep purple in shade. To make blue latte, place ice cubes ¾ th filling the serving glass. Pour in simple syrup, milk, vanilla extract over it. I used some blue ice cubes in the top. PAVAKKAI PITLAI RECIPE, BITTER GOURD PITLAI Grind the roasted items with ¼ cup grated coconut, ½ cup water to a paste. Once the dal and bitter gourd are cooked, transfer both to a heavy bottomed vessel. Adjust salt and water. Bring to boil. Add ground paste and mix well. Adjust water if needed. EASY PEANUT CHUTNEY, PEANUT CHUTNEY WITHOUT COCONUT Once its is crisp, transfer to a plate for cooling and roast chana dal and urad dal with a tsp of oil. Lastly add green chillies and fry. Cool everything. Remove the skin of the peanuts completely. Then, place the roasted ingredients in the mixer and grind with ginger (if desired), salt and water. CUSTARD APPLE JUICE RECIPE Custard apple also known as seetha pazham (in Tamil) is an amazing fruit with enormous health benefits. It has anti cancerous properties, is high in magnesium, good for arthritis and cardio vascular diseases etc. Vj always ask me to buy and make juice. MINT PULAO RECIPE, HOW TO MAKE MINT PULAO Cook in medium flame till oil separates. Add rice and required salt. Mix well. Add 1 & ½ cups water and bring to boil. Cook in lowest flame for 12 mins. If you want to give whistle, just close the lid after adding water and give 2 whistles in medium flame. Roast cashew nuts in ghee and add to the pulao.RAKS KITCHEN

Refer notes), channa dal and toor dal first until dals are golden in colour. Roast in medium flame with constant frying. Transfer to a plate for cooling and then roast coriander seeds and pepper until fragrant. CUT MANGO PICKLE RECIPE Cut into strips and chop them as shown in the picture. Clean and dry in sun for an hour or until there is not extra moisture. In a preferably porcelain or glass container, mix all the ingredients except the mango, using a clean ladle. Add mango and mix well. Keep it aside and I gave the pickle stir once everyday for 3-4 days. MINT PULAO RECIPE, HOW TO MAKE MINT PULAO Cook in medium flame till oil separates. Add rice and required salt. Mix well. Add 1 & ½ cups water and bring to boil. Cook in lowest flame for 12 mins. SIGAPPU ARISI KOZHUKATTAI, RED RICE KOZHUKATTAI Sigappu arisi kozhukattai method: Wash & soak red rice for 3 hours. Drain water and spread in a clean kitchen towel for 15 mins. Transfer to a mixie and powder to a fine flour. Heat a pan and dry roast the flour in medium flame until moisture is gone. Steam will rise and turn to a free flowing flour. Transfer to a plate and cool down. THAKKALI KUZHAMBU RECIPE, SOUTH INDIAN GRAVY FOR RICE Mash the peeled tomatoes well with your hands. Peel the shallots and slice them lengthwise. Heat a kadai/pan with oil and splutter mustard. Add curry leaves,green chillies and onion. Fry until golden spot appears over the onion. Add the second extracted thin coconut milk, 1 & ¼ cup water, the mashed tomatoes, sambar powder.RAKS KITCHEN
