GLUTEN-FREE PIEROGI DOUGH Whisk together the yogurt, milk, egg, and salt in a large bowl. Add the GF flour, and mix until well combined in one mass. Cover the dough and set aside while you prepare your filling. Divide the dough into 4 pieces. Sprinkle some of your GF flour on the work surface and roll out the dough one piece at a POLISH POTATO SOUP (ZUPA ZIEMNIACZANA) Cut bacon into ½ inch pieces. Quarter Polish sausage lengthwise and cut into ½ inch pieces. Peel and cube the potatoes, in a Dutch oven. Sauté bacon until crisp, remove from the pan and reserve half for topping. Cook the Polish sausage in the bacon grease until it POLISH SAUERKRAUT BREAD Tuck the ends underneath and place on a baking sheet which you have greased or lined with parchment paper and sprinkled with cornmeal. Cover and let rise for about an hour, until doubled in size. Preheat the oven to 400 F. Whisk together the egg and milk, brush the top and sides of the loaves. VINEGAR ROLLS (GRANDMA'S RECIPE) Preheat oven to 425. Roll dough into a 12 inch square. Spread with butter. Sprinkle with 2 tablespoons sugar and cinnamon. Beginning with one side, tightly roll up the dough and place in a baking dish, seam side down. Combine water and 2/3 cup sugar in a saucepan and stir KREMÓWKA PAPIESKA OR PAPAL CREAM CAKE Preheat oven to 425 F, divide frozen puff pastry into two equal pieces, poke at 1 inch intervals with a fork, place on a parchment lined baking sheet, top with parchment, and an upside down cooling rack, bake for 15 minutes, remove top parchment and cooling rack, bakeat least 2

When fruits are in season during the summer, everyone (from grandma on the farm to the 30-something foodie in the city) is putting up cordials to be consumed when temperatures begin to drop. Ed and I love salads, especially in the summer. It’s so easy to get into a rut, throwing together the same ingredients week after week. To help all of us in this regard, I’ve put together a month’s worthof salad recipes.
CHEESE BABKA
Add warm milk to a mixing bowl with yeast, and 1 tablespoon of sugar, stir and let sit for 5 minutes, it should become foamy. Add remaining sugar, egg, egg yolk, flour and salt, mix until well combined using mixer dough hook for 5 minutes, add butter and mix until fully incorporated about 3 minutes, the dough will be tacky. POLISH PICKLED HERRING (ŚLEDZIE MARYNOWANE) Instructions. Add prepared fish to a large sterile jar. Add all other ingredients to a saucepan and heat to a boil, cool. Directions. Gently combine first 7 ingredients with 1/2 of the tomato sauce. Fill the pepper halves and place in a baking dish. Top with remaining tomato sauce. In a large dutch oven, saute onion and apples in butter until soft. Cut cabbage into quarters, remove core and outer leaves, thinly slice remaining leaves to produce a finely shredded cabbage. Add cabbage, vinegar, sugar, salt, and pepper to pan, cook approximately one hour, until cabbage is soft, stirring occasionally. POLISH POTATO SALAD (SAŁATKA JARZYNOWA) 1 large or 2 leeks, white part only, carefully rinsed. 1/2 cup finely chopped flat-leaf parsley. 2 1/2 teaspoons salt, divided. 1 tablespoon olive oil. 8 medium potatoes. 6 carrots. 1 sm-med celery root (or 1/2 large) 1 dozen eggs, hard-boiled. 2 cups shredded dill VINTAGE PINEAPPLE PIE RECIPE Preheat oven to 300 F. Combine cornstarch, 1/4 cup sugar, and salt in a saucepan. Add pineapple (including liquid) Cook over medium heat, stirring, until clear and thickened. Beat egg yolks with 1/4 cup sugar and add to pineapple mixture. Cook 1 minute. Cool. Add lemon juice and pour into pie crust. Make meringue by beating 2 egg whites untilPOLISH HOUSEWIFE

POLISH POPPY SEED DANISH Preheat the oven to 425. Roll the thawed pastry into a 10-inch x 15-inch rectangle. Cut into 6 squares that are approximately 5 x 5 inches. Place the squares on a parchment-lined baking pan. In the center of each square, place 1 tablespoon of poppy seed filling, and 1teaspoon of jam.
