(It’s ok if it’s pear-passion fruit or passion fruit guava) CHOCOLATE PEANUT BUTTER POPSICLES (VEGAN) • ONE LOVELY LIFE Chocolate Peanut Butter Popsicles (Vegan) - These healthy chocolate peanut butter popsicles feel like such a delicious treat! OUR FAVORITE STORE-BOUGHT GLUTEN-FREE SNACKS FOR KIDS POPCORN + POPCHIPS. Angie’s BoomChickaPop Kettle Corn is gluten-free AND dairy-free! Angie’s BoomChickaPop Sea Salt Popcorn is a good gluten-free, dairy-free salty popcorn. SkinnyPop is another option (though I prefer the Angie’s flavor!) SkinnyPop Popcorn Mini Cakes – These are like mini rice cakes made from popcorn. STRAWBERRY ORANGE SUNRISE POPSICLES (PALEO + VEGAN) • ONE In a blender, puree strawberries until smooth. Taste the mixture and sweeten with 1-2 Tbsp. syrup, honey, or agave, if needed; Divide the strawberry mixture between your popsicle molds (mine holds 10 OVERNIGHT REFRIGERATOR PIZZA CRUST (DF) • ONE LOVELY LIFE To make the dough, combine the flour, sugar, salt, and yeast in the bowl of a mixer. Pulse just to combine. With the machine running, add the cold water and process just until the dough is combined and all dry ingredients are incorporated, about 10 seconds. Let dough rest for 10 minutes. Add the oil to the dough. SIMPLY ROASTED ZUCCHINI AND TOMATOES • ONE LOVELY LIFE Simply Roasted Zucchini and Tomatoes – This simple veggie medley makes the most of summer produce. My favorite method + half a dozen delicious variations below! Summa-summa-summa-summa-summatime! Summertime is the BEST produce time! Everything good is season it seems–peaches, berries, corn, tomatoes, and–of course–zucchini! While my very favorite way to eat EASY MUSHROOM GRAVY (VEGAN + PALEO OPTIONS!) • ONE LOVELY LIFE Pour in broth, 1 Tbsp. tamari, salt, pepper, sage, and rosemary. Stir to combine and whisk or stir over medium-low heat until the gravy thickens. (This takes 5-10 minutes, depending on what thickener you use) Taste and adjust seasonings as desired, adding more tamari orherbs as desired.

(Gluten-Free, Vegan) 6 AMAZING WAYS TO STUFF A SWEET POTATO Instructions. Preheat the oven to 375 degrees. Wash all potatoes and prick with a fork or a knife several times each (6-8 times at least). Place bread cubes in a greased 9×13″ (3-quart) baking dish. In a medium bowl, whisk together eggs, milk, syrup/sugar, cinnamon, vanilla, and salt. (The cinnamon may look a little clumpy. Add 1/2 tsp. salt to the water and cover with a lid. Bring the water to a boil and boil potatoes 12-15 minutes, or until potatoes are still slightly firm but tender. CHICKEN PESTO ALFREDO PIZZA • ONE LOVELY LIFE 3-4 Tbsp basil pesto. 1c broccoli florets. 1/2c-3/4c bell peppers, diced. 1/2 medium onion, diced. 8oz grated mozzarella cheese. Directions: Brush unbaked crust with olive oil and sprinkle with coarse salt. Pre-bake crust at 450 degrees 10-15 minutes. Meanwhile, in a small saucepan, heat alfredo sauce and pesto together and stir tocombine.

HOW TO MAKE HEALTHY HOMEMADE JELLO • ONE LOVELY LIFE Remove from heat and stir in honey (if using) and the bloomed juice/gelatin mixture. Stir to dissolve. Pour into an 8×8 (2 quart) baking dish for thick Jello or a 9×13″ baking dish for thin Jello, or into individual glasses or jars for individual portions. Refrigerate about 4 hours, or until set. GLUTEN-FREE BERRY CRISP • ONE LOVELY LIFE Preheat oven to 350 degrees F. Set out a 9×9″ square baking pan and a sheet pan. In a large bowl, make your filling. Combine berries, sugar, orange juice, cornstarch, and salt. When ready to bake, preheat oven to 350 degrees F. Line a baking sheet with parchment and place powdered sugar in a bowl. Use a scoop or a INSTANT POT CHARRO BEANS (MEXICAN PINTO Press PRESSURE COOK and set timer to 30 minutes. (It will take about 10-12 min for the Instant Pot to come to pressure, then 30 minutes to cook.) When the beans have finished cooking, allow the pressure to naturally release for 20-25 minutes, then quick-release remaining steam. Stir the beans and add cilantro and additional salt, asdesired.
CILANTRO LIME SLAW FOR TACOS AND MORE! • ONE LOVELY LIFE Instructions. In a large bowl, combine coleslaw mix (or green cabbage), purple cabbage, 1/4 cup cilantro, lime juice, 1 tsp. honey (if using), salt, and pepper. Stir to combine well. (The slaw may still look a bit dry. Don’t add more liquid yet!) Let the mixturesit for 5
THE PERFECT PALEO MEATBALLS (WITH VIDEO!) • ONE LOVELY LIFE Food processor directions: Fit the processor with your metal S-blade. Place green onion, grated zucchini, basil, and garlic in the bowl of the processor and pulse to break up a bit. Add ground beef, salt, and pepper, and pulse to combine. Try not to over process, but to get the ingredients combined. SIMPLE VEGETABLE MINESTRONE SOUP (GLUTEN FREE & VEGAN To make the soup, heat olive oil in a Dutch oven or large soup pot over medium heat. Add onion, celery, and carrots, and sauté over medium heat 5-7 minutes, or until veggies are partially softened. Add garlic, tomato paste, and a bit of salt and pepper (as desired). Stir to coat the veggies. (THE BEST) FISH TACOS WITH HONEY LIME CILANTRO SLAW • ONE Prepare the Cabbage Slaw: In a medium or large bowl, combine green and white cabbage, cilantro, lime juice (start with 1 Tbsp), honey, salt and pepper. Taste and add additional lime juice or honey as desired. Stir to combine well and set aside until ready to serve. The salt and lime juice will help soften and break down the cabbage.ONE LOVELY LIFE

You’ll love the dressing! (Gluten free, vegan)_ I’ve been listening to the book Save Me the Plums by Ruth Reichl and her writing feels like talking to a good friend. The way she talks about tastes, textures, and the constant pull to try new foods fills me up and leaves me hungry at the same time. Since I was in my teens, that pull to try new things in the kitchen has been with me. I love experimenting with new techniques, tasting different varieties of fruits and veggies I find at the store, and reading cookbooks cover to cover like novels. It’s just IN me. This Thai-inspired cucumber salad is that kind of recipe that fills up my little foodie heart. It’s reminiscent of refrigerator pickles but with a tangy, slightly spicy twist. It’s got color and crunch, and pops of different flavors–bright tang from the vinegar, a subtle sweetness from the chili sauce, a bit of saltiness, and then a little kick at the end to balance things out.
