MY FOOD STORY
Hi There! I’m Richa, the cook, writer and photographer behind this little blog. I’ve grown up in the kitchen along side my mum and grandmothers and conversations in my family are always about the next meal. I’ve picked up their love for food along the way, and with this blog, I share my food story with you. REFRESHING MANGO SORBET WITHOUT AN ICE CREAM MACHINE Cut mangoes into ½ – ¾ inch cubes and put on the parchment lined baking tray. Spread them out evenly. Cover and freeze diced mangoes for at least 4 – 5 hours in the freezer. Add sugar and water to a heavy bottomed pan and simmer on medium heat. Continue simmering for 4 – 5 minutes or until all the sugar has dissolved. INSTANT POT GARLIC MASHED POTATOES (PRESSURE COOKER RECIPE) Instructions. In an Instant Pot add potatoes, garlic, water, salt and one and a half tablespoons butter. Put the lid on, turn the valve to sealing and cook on manual high pressure for 8 minutes. (My Instant Pot took 10 minutes to come to pressure, so the total time taken was 18 minutes). Release pressure immediately by turning the knob to 'vent MUSHROOM SPAGHETTI AGLIO OLIO RECIPE WITH THE EASIEST While the spaghetti is boiling, heat a tablespoon of olive oil in a pan and add mushrooms. Saute on medium high heat for a few minutes till golden brown on all sides. Push the mushrooms to one side of the pan and add the remaining olive oil, garlic and chilli flakes. Saute for about a minute, making sure not to burn the garlic and addspaghetti
HOW TO MAKE BUTTERMILK FOR BAKING The process is really simple – mix the acid in the milk and then let it sit for 10 minutes till you see the milk curdling, and curds forming. There, your buttermilk is ready! Pour milk into a jar. Add vinegar or lime juice. Mix well and let the mixture sit for 10 minutes. The milk curdles and homemade buttermilk is ready. SOAKING BEANS 101: HOW TO SOAK BEANS AND WHY Let the beans cook without a lid for about 5-6 minutes. Turn off the heat and cover the vessel. Leave it for about an hour, drain the water, and use the beans. Alternatively, place beans in a container, top with boiling water, stir in a teaspoon of salt (salt helps with the absorption of liquid) and cover it tightly with a lid. CHICKEN FAJITA MEAL PREP LUNCH BOWLS + CILANTRO LIME QUINOA I’m clearly a meal prep fan now because this is the third meal prep recipe on the blog after Chicken Burrito bowls and Chicken Teriyaki bowls.But guys this one is a sure shot favorite! Put about 5 cups of assorted vegetable scraps like peels of carrots, onions, bottle gourd as well as stalks of cauliflower, broccoli, mushrooms etc. in a large pot. Add 3 litres of water along with bayleaf, peppercorns, parsley and thyme. Once the stock starts to boil, reduce to a simmer and let cook for about 40 minutes to an WHITE SAUCE PASTA WITH VEGETABLES Instructions. In a large pot bring 5 cups water to a rolling boil, add 2 tablespoons of salt to this along with uncooked pasta. Cook according to package instructions till al dente. Drain, wash with cold water and set aside. In another pan, add olive oil and butter and heat till the butter has melted. In another mixing bowl, add sugar, curd, oil and vanilla essence. Beat on low speed with a hand/stand mixer until just combined. Add the prepared paste and all the spices (curry powder, turmeric powder, garam masala, chilli powder, cinnamon powder, cardamom powder). Cook stirring occasionally, for 3-4 minutes or untilthe ghee separates.
PERFECT JEERA RICE (INDIAN CUMIN RICE) Heat ghee in a pot and add the whole spices and cumin seeds to it. Once the cumin seeds start spluttering, add the chopped green chilli and drained rice to it. Saute the rice in the pan for two minutes on a medium flame. This helps add more flavor to the rice. Add two cups water and salt to the rice and mix well. SLOW COOKER CHICKEN CURRY Saute for 3-4 minutes till the onions soften. Transfer this mixture to the slow cooker along with all the other ingredients. Mix well. Cover and cook on high for 3.5-4 hours or low for 6 hours. Once the chicken curry is cooked, mix in the chopped coriander and serve hot on top of steamed rice or with some butter naan. Divide the dough into lemon sized balls. TERIYAKI SHRIMP BROCCOLI STIR FRY (READY IN 30 MINS) Instructions. Mix together all the ingredients under sauce and set aside. Heat half the oil in a wok or pan, and add the chopped garlic. Saute for a minute and add shrimp. Stir fry the shrimp on high heat for 2-3 minutes till it starts turning pink. Add the broccoli CREAMY CAULIFLOWER CHOWDER (30 MINUTE AND GLUTEN FREE In a dutch oven or soup pot, heat butter and add onions and garlic. Saute for a few minutes till the onions are soft. Add carrots, cauliflower, vegetable broth, pepper, oregano and salt to the pot. Bring this to a boil, and slow the heat down to a simmer. Cook for 15 minutes or so till the cauliflower is tender. REFRESHING MANGO SORBET WITHOUT AN ICE CREAM MACHINE Cut mangoes into ½ – ¾ inch cubes and put on the parchment lined baking tray. Spread them out evenly. Cover and freeze diced mangoes for at least 4 – 5 hours in the freezer. Add sugar and water to a heavy bottomed pan and simmer on medium heat. Continue simmering for 4 – 5 minutes or until all the sugar has dissolved. NO YEAST NAAN IN 30 MINUTES (ON THE STOVETOP) Cover with a damp towel and set aside in a warm place for 25-30 minutes. If you live in a cold place, rest the dough for 1.5-2 hours. But in warmer climate, 30 minutes is sufficient. Heat a flat non-stick pan or skillet or tawa. I love using a cast iron tava. INSTANT POT CHICKEN IN MUSHROOM SAUCE Add mushrooms and cook for 2-3 minutes until the mushrooms start to brown, stirring occasionally. Add garlic and saute until fragrant. Add thyme, salt, pepper and continue to saute for 2 more minutes. Add stock and stir together until well-mixed. Turn off the Sauté mode. Add chicken to the pot in a single layer, nudging the mushrooms to thesides.
PERFECT JEERA RICE (INDIAN CUMIN RICE) Heat ghee in a pot and add the whole spices and cumin seeds to it. Once the cumin seeds start spluttering, add the chopped green chilli and drained rice to it. Mix together all the ingredients mentioned under sauces and add that to the pan. SHEET PAN HONEY BALSAMIC CHICKEN THIGHS WITH VEGGIES Instructions. Pre-heat oven to 220C/425F. Mix together all the ingredients under honey balsamic chicken and toss the chicken thighs well. Set aside while you prep the veggies. Add all the veggies to the and toss them in garlic powder, olive oil, salt and pepper and spread them out on the pan. INDIAN STYLE WHOLE MASALA ROAST CHICKEN Instructions. Wash the chicken and pat dry. Mix together chili powder, ginger, garlic paste, pepper, jeera, honey, vinegar, butter and salt into a smooth paste. Apply the chili paste all over the chicken, into the crevices and under the skin wherever there are gaps. CHINESE HOT AND SOUR SOUP WITH RAMEN Add the ramen to the pot. While the ramen is cooking, stir together cornstarch in 1/4 cup water and slowly add it to the pot while stirring continuously. Bring the soup to a quick boil. The soup should start to thicken. Put about 5 cups of assorted vegetable scraps like peels of carrots, onions, bottle gourd as well as stalks of cauliflower, broccoli, mushrooms etc. in a large pot. Add 3 litres of water along with bayleaf, peppercorns, parsley and thyme. Stir in the flour and cook for another minute to get rid of the raw flour flavor. Slowly add the chicken broth and keep whisking continuously till the sauce thickens. Stir in the rosemary, parsley, paprika, salt, pepper and meatballs. Add a little more stock or water if the sauce is too thick. CRISPY TOFU BROCCOLI STIR FRY Heat oil in the same pan and once its hot, add garlic and ginger. Saute for a minute and add the broccoli florets. Cover and cook on high for 3.5-4 hours or low for 6 hours. Once the chicken curry is cooked, mix in the chopped coriander and serve hot on top of steamed rice or with some butter naan. STRAWBERRY POKE CAKE (FROM SCRATCH) This strawberry poke cake is made from scratch and is a soft, moist jello poke cake that is topped with whipped cream and fresh strawberries.
