RHUBARB CHUTNEY (RELISH, PICKLE) Method. In a blender coarsely ground the fenugreek, coriander, fennel and cumin seeds. In a saucepan put the oil and add all the ingredients except the sugar. Mix it well. Cook over medium heat until the rhubarbs are tender. This should take about 4-6 minutes. Stir the rhubarb occasionally to make sure it does not burn from the bottom.CHAI (MASALA TEA)
Instructions. Mix all the spices and grind to a powder. I prefer to use a coffee grinder, the one I keep just for spices. Store the chai spice mix in airtight container. Kacche Aam Ki Dal is a very simple dal recipe but delicious. This is Toor dal with raw mango. The tanginess of raw mangoes gives a delicious flavor to dal. BESAN SEV (CRISPY INDIAN SNACK) Besan sev is a popular savory crispy snack, which is made in almost every household in India. These noodle-like Sev are so tasty that when you start munching, it's often difficult to stop. This is a quick and easy recipe. Besan Sev is a great snack to make in bulk as it staysfresh for months.
LAUKI VADI KI SABJI
When seeds start to crack, add the asafetida, stir and add tomato puree, ginger, coriander powder, turmeric, salt and chili powder and cook stirring occasional till spice mix start leaving the oil. Add bottle gourd, vadies and 1/2 cup of water. Change the setting to CREAMY SPINACH PASTA Instructions. Bring a large pot of water to boil, add salt and oil. After water boils add the pasta.Cook the pasta until it is tender this will take about 10 minutes. Drain the water and set pasta aside. Heat the oil over medium heat and add all-purpose flour, then stir for a minute. Add basil, Italian herb mix, black pepper, and chili flakes UPMA SOOJI (CREAM OF WHEAT) Heat the oil in a saucepan. Test the heat by adding one cumin seed to the oil; if it cracks right away oil is ready. Add black mustard seed and cumin seed. Add mustard seed and cumin seeds as seeds crack, add peanuts and stir for one minute. Add sooji and stir-fry about 3 minutes on medium heat till sooji turns gold brown.HAPPY NEW YEAR!

Another popular variation is Gujarati Kadhi, which is sweet and sour and made watery with a soup-like consistency. When first time I had gujrati Kadhi, I thought it was yogurt hot and spicy drink, and enjoyed very much, still my perception has not changed. DAHI VADA - MANJULA'S KITCHEN - INDIAN VEGETARIAN RECIPES Dahi Vadas are lentil dumplings topped with a spicy savory yogurt and tamarind chutney. Stir fry two minutes. Add the tomatoes, salt, sugar, and pepper. Cook until tomatoes are mushy. Let the tomatoes cool, then puree in blender. Heat the oil in a saucepan. Add the cumin seed and asafetida. As the cumin seeds crack, add cilantro and stir for a minute. Add the tomato pure and approx. 1¼ cup of water (adjust the water to yourtaste).

MIXED VEGETABLE PAKORAS These Mixed Vegetable Pakoras are an all-time favorite snack in India. There are endless variations of pakoras, which are also known as bhajias. Mixed vegetable pakoras as the name suggests are made with a variety of vegetables. Pakoras are great as an appetizer or snack for any type of the gathering. They are perfect for a rainy day, and even more delicious paired with a cup of hot spicy chai. TIL KI BURFI (SESAME SEED BURFI) Cook over medium-high heat, stir continuously till the mixture starts to bubble. Lower the heat to medium and keep stirring and scraping the sides and bottom of the pan, until mixture is reduced to thick paste and starts coming together. This should take 8-10 minutes. Kacche Aam Ki Dal is a very simple dal recipe but delicious. This is Toor dal with raw mango. The tanginess of raw mangoes gives a delicious flavor to dal. CABBAGE PAKORA (BHAJIA) Instructions. Combine all the dry ingredients, to cabbage besan, rice flour, cumin seeds, coriander, red pepper, salt, asafetida, cilantro, and green chili in a bowl. Mix it well. Heat the oil in a saucepan over medium-high heat. Test the heat by adding one cumin seed to the oil. If the cumin seed cracks right away, the oil is ready.
