MAMA’S LEBANESE KITCHEN Baba Ghanouj – Roasted Eggplants With Garlic and Tahini. Appetizers, Dips, Gluten Free, Mezza, Paleo Recipes, Traditional, Vegetarian. We just came back from a visit to Lebanon and in the process captured a whole bunch of recipes straight from Mama’s kitchen. This LEBANESE NIGHTS DESSERT RECIPE Lebanese Nights, aka “Layali Lubnan” is an amazingly aromatic dessert that is quite refreshing in summer time. It has a rich complex taste stemming from subtle hints of Mastic (aka Mistika, or Mastika in Greek, or “Arabic Gum” (not to be mistaken with “Gum Arabic”) , orange blossom water and rose water. The bottom layer is made of the actual pudding, topped with a layer of whipped LEBANESE SPICY TAHINI FISH Place fish on olive oil-greased cooking tray and bake at 300 degrees F for 20-25 minutes. In a small pan, mix 1 cup of pine nuts with 1-2 tablespoon of olive oil and cook on medium heat for about 3 minutes or until lightly browned. Be careful as they can burn very fast. BAKED FISH WITH GARLIC AND LEMON Crush garlic, 6 table spoons of olive oil, and ½ teaspoon of salt using a mortar and pestle, blender or small food processor. If using a mortar and pestle, crush garlic with salt first, then slowly add oil while continuously whisking. Once oil is fully added, slowly start adding lemon juice and stirr/whisk. Place fish on aluminum foil that's HOW TO MAKE LEBANESE COFFEE Method 1: As soon as you have poured the coffee into the boiling water and stirred it, it’s ready. Turn off the stove and let the coffee pot rest for 3-5 minutes before serving. In this style the coffee will contain some foam. VEGETARIAN STUFFED GRAPE LEAVES RECIPE How to Roll the Grape Leaves. Lay the leaves flat on a cutting board with the rough side facing upwards. Add ¾ teaspoon of stuffing towards the bottom of the leaf as in the photo below. Roll bottom of leaf over the stuffing, ⅓rd of the way. Fold right side over, ⅓rd of the way. Fold left side over, ⅓rd of the way. STUFFED CABBAGE ROLLS WITH MEAT AND RICE Mix them well and set aside. Lay each cabbage leaf separately on a cutting board, cut out the stem if it's too thick. Spread 1 teaspoon of our garlic paste along the diameter of a pita bread, add some salted cucumber pickles, french fries, grilled tomatoes or peppers (optional), the grilled chicken shish tawook, roll as in a burrito and enjoy. You could also toast the sandwich roll through a panini grill for 2-3 minutes. LEBANESE GARLIC SAUCE RECIPE: TOUM, THE ULTIMATE GUIDE Add the garlic and salt in the food processor and run for 10-20 seconds. Stop processor, scrap garlic down the sides, then run processor again for another 10-20 seconds. Repeat process 3-4 times until garlic starts to turn pasty and looks crushed. CHICKEN SHAWARMA RECIPE: HOW TO MAKE SHAWARMA AT HOME Mix all ingredients in a blender, add to a bowl and mix well with the chicken, cover and let marinate in the fridge overnight. When ready, grill the marinated chicken using a panini/George Forman grill for about 15 minutes on medium heat. You can also cook the chicken on a BBQ grill if so you wish. Meanwhile place the garlic cloves, 1/2 teaspoon of salt and 2-3 table spoons of olive oil in a blender/food processor and spin for 4-5 minutes, add the lemon juiceand spin for
BABA GHANOUJ
Baba Ghanouj is made by mashing roasted eggplants with Tahini paste, some garlic, and a bit of white vinegar to help lighten the color.It is served as a cold appetizer dip along with pita bread and some salted Lebanese pickles such as cucumbers, chili peppers and turnips. BAKED FISH WITH SUMAC AND OREGANO SPICES The Oregano baked fish is fairly simple to make: pick a fresh fish along the lines of Red Snapper, rub it with ground thyme or oregano, stuff it with garlic and lemons and bake it gently. Once cooked, let cool a bit then pull fish meat, cover with a chunky paste of sumac, thyme, garlic, lemon juice and peppers, bake again then indulge. JUICE FAST DAYS 11-15: GOING BACK TO NORMAL, AND CONCLUSIONS Juice Fast Days 11-15: Going Back to Normal, and Conclusions. Last night I concluded my 15-day Juice Diet journey and it feels good to go back to normal life, almost. The next few days I need to ease back into my normal diet, with slowly introducing animal-based fats and proteins otherwise I could shock my body and get sick if I go at it atonce.

LEBANESE SPICY TAHINI FISH Place fish on olive oil-greased cooking tray and bake at 300 degrees F for 20-25 minutes. In a small pan, mix 1 cup of pine nuts with 1-2 tablespoon of olive oil and cook on medium heat for about 3 minutes or until lightly browned. Be careful as they can burn very fast. Baba Ghanouj is made by mashing roasted eggplants with Tahini paste, some garlic, and a bit of white vinegar to help lighten the color.It is served as a cold appetizer dip along with pita bread and some salted Lebanese pickles such as cucumbers, chili peppers and turnips. BAKED FISH WITH GARLIC AND LEMON Crush garlic, 6 table spoons of olive oil, and ½ teaspoon of salt using a mortar and pestle, blender or small food processor. If using a mortar and pestle, crush garlic with salt first, then slowly add oil while continuously whisking. Once oil is fully added, slowly start adding lemon juice and stirr/whisk. Place fish on aluminum foil that's GRILLED KAFTA KABOB RECIPE Finely chop the parsley leaves (discarding the stems) Mix all ingredients well together and make into patties or put on Kabab skewers. Grill on medium heat for about 10-15 minutes max. Serve Kafta while hot along with some Lebanese pita bread, grilled onions and vegetables. Kafta goes VERY well with a side of Tabbouleh Salad .. tryit out 🙂.

LEBANESE SPICY TAHINI FISH Place fish on olive oil-greased cooking tray and bake at 300 degrees F for 20-25 minutes. In a small pan, mix 1 cup of pine nuts with 1-2 tablespoon of olive oil and cook on medium heat for about 3 minutes or until lightly browned. Be careful as they can burn very fast. HOW TO MAKE LEBANESE COFFEE Method 1: As soon as you have poured the coffee into the boiling water and stirred it, it’s ready. Turn off the stove and let the coffee pot rest for 3-5 minutes before serving. In this style the coffee will contain some foam. Method 2: As soon as you have poured the coffee into the boiling water, lower the heat, stirr the coffee in, and hold LEBANESE GARLIC SAUCE RECIPE: TOUM, THE ULTIMATE GUIDE Add the garlic and salt in the food processor and run for 10-20 seconds. Stop processor, scrap garlic down the sides, then run processor again for another 10-20 seconds. Repeat process 3-4 times until garlic starts to turn pasty and looks crushed. Bring the mix to a near boil on medium to low heat all while stirring continuously. When the pudding nears boiling and starts to thicken, add 2 table spoons of orange blossom flower water and stir for 3 more minutes. VEGETARIAN STEW OF OKRA Instructions. Cut/discard the stems of Okra, rinse well, then let dry. Chop all the other vegetables and mince the garlic. In a deep pot, fry the Okra in ½ cup of oil until they turn brownish, then place them on paper towels or in strainer to strain away the oil. Some items like Burghul (Bulgur) or cracked wheat can be found in mainstream supermarkets, however most of the other ones are found in Middle Eastern and Arab owned grocery stores instead. AUTHENTIC LEBANESE TABBOULEH SALAD RECIPE Tabbouleh is a healthy, rich and super-green salad with pure Lebanese origins that is known for its spicy-tangy kick. In traditional Lebanese cuisine, Tabbouleh (sometimes spelled and pronounced as Tabouli) is usually served along with Mezza which is a host of appetizers and hors-d’oeuvres. LEBANESE BEEF SHAWARMA RECIPE, MADE AT HOME! Grilling Shawarma Method 2: Oven Roasting. Lay the shawarma chunks in a Pyrex tray with a bit of marinade, cover the trap tightly with aluminum foil, then gently bake at 270-300F for 2 hours. Once cooked, shred the meat on a cutting board and serve hot. CHICKEN SHAWARMA RECIPE: HOW TO MAKE SHAWARMA AT HOME Mix all ingredients in a blender, add to a bowl and mix well with the chicken, cover and let marinate in the fridge overnight. When ready, grill the marinated chicken using a panini/George Forman grill for about 15 minutes on medium heat.
