Break the cauliflower into uneven chunky florets with your hands or use a small knife. 75 gm ghee or coconut oil, melted. 6 sprigs fresh curry leaves – leaves removed and shredded. ROASTED RENDANG CAULIFLOWER Roasted Rendang Cauliflower. For the first recipe Kate used a whole cauliflower. It was smothered in a combination of 1 jar of rich Latasha’s Kitchen Rendang Terlagi Lagi Paste and juice of half a lemon. Then baked in a pre-heated 180˚C oven for 1 hour (or until the outside is browned and a knife can easily pierce the cauliflower). SLOW COOKED ROGAN JOSH LEG OF LAMB Method. Simply add saffron, yoghurt, chilli, tomatoes, mint and coriander and cook in a tagine with toasted raisins, cashews, almonds SLOW COOKER BIRIYANI CAPRETTO Layer the base of the slow cooker with onions, fennel, garlic, chilli, coriander stems and some salt. Allow onions to soften slightly then add Latasha’s Kitchen Biriyani Masala Paste. Mix well with the onions and cook for around 5 minutes on medium heat. Next add the capretto shoulder and allow it to brown on all sides for around 8minutes.

BUTTER CHICKEN LASAGNA Shred the chicken pieces and keep aside. Pre-heat the oven (fan forced) to 180°C. Heat oil in a large heavy bottom pot and add Latasha’s Kitchen Butter Chicken Concentrated Sauce, tomatoes and sweet paprika. Cook on high heat for 2-3 minutes till the tomatoes are broken down; add 1 cup reserved liquid and then simmer covered foranother 5
SRI LANKAN FISH CURRY Method. Combine fish with Latasha’s Kitchen Turmeric Spice Magic and ground white pepper in a bowl, mix well and set aside. Heat coconut oil in a large saucepan over medium-high heat, add cinnamon stick, mustard seeds, fennel, fenugreek plus curry leaves stripped from 4 sprigs. Stir until aromatic and spices start spluttering. VIETNAMESE CHICKEN CURRY Method. Cut chicken into large even chunks. Add Latasha’s Kitchen Garam Masala to the chicken, mix well and marinate for 4-6 hours. Prepare onions, potatoes and carrots. Semi-fry potatoes and carrots in batches in a large deep pot until sealed and lightly browned all over.Keep aside.

These simmer sauces are a boon to low-FODMAPPERS as adding flavour to their meals in a hurry is notalways easy.
THAI CHICKEN LAKSA • LATASHA'S KITCHEN Strain the stock and use it in the laksa. Heat the oil in a wok or big pan over medium heat. Add the onion and gently caramelise it without browning too much. Reduce the heat and add Latasha’s Kitchen Thai Red Curry Paste, lemongrass, turmeric (if using) and cook, stirring,for 6
DEVIL CURRY
Method. Fry blended ingredients in a wok with some oil until fragrant, approx. 15 minutes. Add chicken pieces and some salt. Stir fry for 10 minutes. Add water and cook until chicken is half done. Add semi-fried potatoes and cook until chicken and potatoes are tender. In a separate pan, heat some oil and fry onions, chillies, shredded gingerLAMB DHANSAK
Bring to a simmering boil, mix again, pop the casserole lid on and transfer into a pre-heated oven set at 180ËšC convection oven or 160ËšC fan forced. Cook for 2 hours. Add lemon juice and adjust salt to taste. Garnish with coriander leaves before serving with steamed rice or couscous. TIP: Lamb Dhansak is even better left overnight toallow

CAULIFLOWER LEAF CURRY • LATASHA'S KITCHEN Heat a frypan (I used the same pot as I used for boiling the leaves and tossed out the water) and add two teaspoons of Latasha’s Kitchen Homestyle Curry Paste. Add a teaspoon of butter and fry to release the curry paste aromas. Add mushrooms. Return the leaves and ribs back to the pan and toss through, allowing everything to be coated in the ROASTED RENDANG CAULIFLOWER Roasted Rendang Cauliflower. For the first recipe Kate used a whole cauliflower. It was smothered in a combination of 1 jar of rich Latasha’s Kitchen Rendang Terlagi Lagi Paste and juice of half a lemon. Then baked in a pre-heated 180˚C oven for 1 hour (or until the outside is browned and a knife can easily pierce the cauliflower). SLOW COOKED ROGAN JOSH LEG OF LAMB Method. Heat a 5 litre slow cooker pot on the stove with 3 tablespoons of olive oil. I use the Kambrook brand. Layer the base of the slow cooker with the sliced onions and some salt.
