This tool is a staple in dad's kitchen arsenal, proudly displayed at the head of the table while carving the roast each holiday. If your dad is new to the world of fancy knives, grab him a 210mm Gyuto or a Santoku to get his collection started. Don't forget the honing THE TRUTH ABOUT DAMASCUS STEEL In a nutshell, there is a thin layer of hard, brittle steel in the core which does the cutting. This is laminated between two layers of softer steel which act as a shock absorber. Think of a sandwich with ham hanging over the edge - the ham is the core, the bread is the cladding. core.

FUJIWARA MABOROSHI

Swordsmith Teruyasu Fujiwara IV has named these knives Maboroshi no Meito, “Visionary Sword Celebrated in Victory” — a bold claim, but one that is deserved. MIYABI KNIVES

Miyabi knives stand out as works of art in the manufactured knife world. Zwilling of Germany, realizing that high-performance Japanese steel was taking over the knife world, did the practical thing and bought themselves two Japanese knife factories in Seki City Japan, a mecca for knife producers.

TERUYASU FUJIWARA

The knives Fujiwara-san makes are the real darlings of Knifewear. Partially because he forges the complete knife from start to finish. Many blacksmiths make a blade with a carbon steel core and laminate it with stainless steel for lower maintenance, well this guy invented

BUNKA | KNIFEWEAR

The Bunka is a bonafide badass, like a kitchen knife in a leather jacket. It is a multi-purpose knife akin to the Santoku. “Bunka” translates to “culture". A blade guard is critical for making sure your edge lasts as long as possible. For those who like wood, we have Sayas too.

NAKIRI | KNIFEWEAR

Underutilized in the western kitchen, the nakiri’s flat blade is meant for the push/pull chopping of vegetables. Since the entire flat edge of the knife touches the cutting board at once, you won't be turning the vegetable into an 'accordion', pieces that are still

Isn’t that hard to care for?” or sometimes “Won’t wood knife handles break more easily?” The reality is, the kitchen knife handles we’re used to in the west are a tad over-engineered. The triple-rivet design certainly looks cool and adds a confident

Gyoza super fan @foodscoutinc sent us this great photo of the Yamada Uchidashi Hammered Steel Gyoza Pan in action. Here is a few words from him "When I saw this pan, it was love at first sight. . . But did I really need another single use pan? Was the eye roll from my family, for walking in with more kitchen stuff worth it? . . . yes." Also, it could be great for tortillas? #hammered #gyoza Was this review helpful?

We just got a shipment of @yu_kurosaki_'s Masakage Shimo line. Made in @tkv_info, these beauts are a full carbon blade with a unique suminagashi pattern. Don't sleep on these, they tend to disappear quickly. Read all about @knife.nerd's love for this line by following the link in our blog. . . . . #damascussteel #suminagashi #japaneseknife #japaneseknives #madeinjapan #chef #chefgear #kitchen #kitchenknife #kitchendecor #cheflife #kitchenlife #foodie #cooking #nakiri #gyuto #masakage #takefu #kurosakiknives #carbonsteel Was this review helpful?

You’re forgiven if you’ve never heard of Masashi Yamamoto-san. His knives aren’t exactly common. After leaving his family’s knife factory, he opened up his first real workshop at his mom’s house - but look at him now! All grown up and moved out. Extraordinary knives hand forged using some beautifully finished Damascus steel which are super easy to sharpen and care for! Ever used one? Life changing! Koi Sujihiki $419, Kuroshu 210mm gyuto $665, Shiroshu 150mm petty $445 Was this review helpful?
