Mandazis are bite sized dough formed snacks in Africa normally made to have with either tea, as a snack or for breakfast. In Mombasa, they make mahamri instead which is made using yeast and coconut milk and eat them with mbaazi which are pigeon peas made in a tasty coconut sauce. This is my mandazi recipe, you can add any spices you wantwhile
SOFT CHEWY OAT BISCUITS METHOD. Preheat oven to 175°C. In a clean bowl, mix in your oats, flour, sugar and baking powder. Then in goes your butter and rub it in, best use your fingers for this really helps you feel the texture. Once that’s done beat your egg and add it in the mixure with SIMPLE PERFECT MOIST BANANA BREAD Pre-heat your oven to 350°F/ 176°C. In a bowl, mash your bananas using a fork until all evenly mashed. Then add your melted butter give it a mix then in with your sugar and mix it altogether once again. Add your one egg beaten of course, then your vanilla extract and mix. We are almost there, it’s day 5 and another recipe is coming your way. So apparently we are going to be on lock down for another 3 weeks, at this point I don’t even know what to think anymore. I used to complain on how school runs were getting difficult and tiresome but its times like these that I’d totally love to walk for 30 minutes and pick up my son. How are you all coping by the way? all about the lovely avocado in my simple, fresh homemade guacamole. Guacamole can be a little bit controversial if you ask me depending on where you’re from because there’s the smooth, spicy, chunky and the crazy version with other ingredients added to it. How is everyone doing? I hope you had a great start of the year. I don’t even know where to begin since it’s been a while since I came on here and wrote something. A little update about my life, so we moved house and still have stuff in boxes, I am yet to put up curtains and drill holes. My son had to change schools and the closest one is apparently out of spaces left. My school runs are not as exciting as before but he will still have to change schools again come next school year. Anyway, it’s been a lot and I have literally not felt like writing anything nor have I recorded any recipes.
