25 VEGAN COLD SUMMER MEALS (THAT REQUIRE VERY LITTLE TO NO These recipes require very little to no cooking making sure you can be in and out of the kitchen in no time (but still get to feast on vegan deliciousness). These vegan cold summer meals are collected from my blogging friends across the net, so simply click on the photo or title of the dish to take you to the full recipe. VEGAN SALMON! PAN-SEARED FILLETS • IT DOESN'T TASTE LIKE Place the tofu in a resealable bag or dish and cover it with the marinade. Let marinate in for a minimum of 30 minutes or overnight in the fridge. To cook the vegan salmon: Put the cornstarch into a wide bowl or baking dish. If using the nori, cut the nori into BANANA PEEL BACON • IT DOESN'T TASTE LIKE CHICKEN Add the banana peels and toss to coat. Let marinade for a minimum of 10 minutes, but as long as a few hours. When ready to cook the bacon, heat the oil in a large skillet or frying pan over medium heat. When hot add the peels and fry a couple of minutes per side, until they are golden and bubble up a little. VEGAN TOFU FILLETS (VEGAN FISH) • IT DOESN'T TASTE LIKE Cook the tofu fillets: In a large skillet or non-stick frying pan, heat the oil or butter. When hot add the tofu fillets to the pan, discarding any leftover marinade. Fry for 3 - 5 minutes per side until the tofu is golden brown and heated through. SWEET KOREAN LENTILS • IT DOESN'T TASTE LIKE CHICKEN Heat the oil in a skillet over medium heat, then add the onion and sauté for a few minutes until the onion softens and begins to brown. Now add the lentils and the sauce. Cover and bring to a gentle simmer until the lentils are cooked and tender, and most of the liquid isabsorbed, about 8
