a blog about an Irish-Italian family living in Limerick! I love this recipe, it’s perfect for using left-over roast chicken and is a realwinter warmer.

We decided to take a last minute trip up to Dublin on Tuesday to do a little bit of shopping and lots of eating and drinking of course;) I always get quite excited when we go up as there is such a varied choice of food compared to Limerick but then it is theITALIAN FOODIES

I have spoken about my love for puff pastry tarts before, I always have a pack in the freezer for when I’m feeling lazy and not up to cooking anything too complicated.This tart was really good, I normally do my asparagus tarts with mozzarella but I saw a recipe with mascarpone when flicking though one of Olive’s recipe booklets and HERBY ROAST CHICKEN!! So winter has arrived here in Ireland, the days are wet and cold and it has started to get dark at 8pm and do you know what I really don't mind! I know I've complained a lot about the weather on this blog but it's just the bad summers that get to me, it'sRADIO GA GA!!!
Here is a little pic of "moi" looking a tad nervous before my radio debut!!!! So, the day finally came and I was perfect that morning, dropped the princess off to her Nonna, scribbled down a few pointers and headed into town and then the panic began. I got really nervouswhen I arrived in
LOCANDA LOCATELLI!!! Ok, I think we just ate one of the best restaurant meals of our lives last Monday night!!! We have wanted to eat in Locatelli's for so long and were worried that we had built it up too high and that we were going to be seriously disappointed but I'm happy to report it was everything and more!! COMMENTS ON: WHERE HAS MY LADYBURD JULIA GONE??? Hehe sorry that sounded a bit condescending. I recently found out that ladybirds do something called 'reflex bleeding' when they feel threatened or are caught by a predator, it comes out of their joints and contains a poisonous chemical (poisonous to other insects, but no doubt harmless to humans) and this leaves a smelly trail on your hand COMMENTS ON: COD STEW WITH CAPERS AND OLIVES It's a rainy day in New York so I thought I would stroll through my blogroll. Looks like I picked the perfect time. For some reason your cod stew reminds me of TUNA STEAK WITH BALSAMIC… make a marinade with the majority of your olive oil, 1 tbsp balsamic, oregano, garlic, sea salt and black pepper. pour over your tuna and leave to marinade for about 2-4 hours in the fridge covered with tinfoil. heat a griddle pan and cook your tuna until medium rare. PATE DI OLIVE NERE!! If you want to make them yourself, here is the recipe for the black olive version: 500g black olives – pitted. 25g salted capers, soaked in water for 10 mins and then drained. 4 anchovy fillets. 1 clove garlic. 125ml extra virgin olive oil. I don’t use salt as there is enough in the other ingredients, you can add chilli or black pepper ifITALIAN FOODIES

The “MIL” is on her annual holiday in Italy for a few weeks so we have to cook our own Sunday lunch, bah humbug!! I love going to her house every Sunday as we have a day off from cooking which is such a treat when you are in the kitchen all week cooking for the masses. CHOCOLATE & HONEYCOMB POTS…. I rarely make desserts, I just never seem to have the time. Whatever time I do have it's spent cooking and being mamma, I don't know how many times I've promised mini Italian foodie that we'll make cupcakes etc but then the day passes us by going to the park, drawing tinkerbell, making lots of sparklyRADIO GA GA!!!

GONE BARKING MAD!!
Ok it's official I'm gone baking mad since I had this baby. I've always cooked but never really bothered baking but to Bru's delight it's my new hobby. I started with fairy cakes, then went onto cookies, then muffins and today I made my masterpiece - A STRAWBERRY AND MASCARPONE TARTand I WE’RE OFF FOR A FEW DAYS!!! We're enjoying a few well earned days off at the Sheraton in Cork, beback soon!!!

COMMENTS ON: THE NEW LA CUCINA… Ohhhh the place looks fab. I wish I were a student again. You are on my list of 'must-eat places' when we move to Ennis. Those pizzas will definitely make it worth the trip. COMMENTS ON: WANT SOME TEA??? If that only includes Rooibos or Pu-Erh, then none! Loose leaf tea brewed in a pot is the only way. As much as I loved picking mint leaves from my mum's garden when I was a toddler and brewing them into the tastiest drink ever, nowadays I only like varieties of Camellia sinensis i.e. actual tea! Hi Lloraine,i mentioned in an earlier reply,my experience as a type 2 diabetic and you seem on the same food path.I try to get a walk in as often as possible after my main meal.Enjoyed a small dry cider with ice instead of the red stuff,seems a good substitute.Watch rice pushes sugar up.Check sugar level with finger prick meter,you will see which foods push the sugar up.Love all your recipes COMMENTS ON: CANNELLINI BEANS WITH TOMATO AND SAGE! Look at Lorraine’s photos for this dish. And also the recipe while you are at it. The pictures are gorgeous and the recipe is easy. My partner Bruno was born here in Ireland to Italian parents, one from the south of Italy and the other from the north and where SPINACH AND BEANS WITH GARLIC AND CHILLI…. heat the olive oil in a pan and cook the onions and garlic over a low heat for about 10 mins until soft but not coloured. add your chilli and cook for 1 min. add your beans and some stock, season and leave to simmer for about 10 mins. in a dry pot cook PATE DI OLIVE NERE!! I don’t use salt as there is enough in the other ingredients, you can add chilli or black pepper if WHO IS THE FAIREST OF THEM ALL?? pre-heat the oven to 170 degrees. cream the butter in a bowl with a wooden spoon until soft and creamy: add the sugar and beat together: add the chocolate chips and mix together: sieve in the flour: mix together until it forms a dough, don’t be afraid to use your hands, don’t worry if it seems a bit crumbly at first, it will cometogether:
POTATO CROQUETTES WITH HAM & CHEESE! I LOVE potato croquettes, you will find them on most casual dining menus in Italy. The MIL often makes them with Gorgonzola or mozzarella for Sunday lunch and there is never enough as they are devoured instantly. There's a little bit of work involved but are a great food for kids and adults alike so ROAST VEGETABLE LASAGNE…. melt the butter in another saucepan, then add the flour & stir well. add the hot milk a little at a time, stirring constantly. cook the sauce for about 10-15 min over a low heat whisking occasionally with a balloon whisk. remove from the heat, season with salt & pepper and nutmeg & stir in the parmesan. SALMON, LEEK & MASCARPONE PARCEL…. So I'm just back from a whirlwind couple of days eating & drinking myself stupid around London, we went over on some research for our new product development & branding! We went to so many places I earned the Overshare Badge on Foursquare for checking into 10+ places in 2 days. The highlight of the trip is CANNELLINI BEANS WITH TOMATO AND SAGE! I love this recipe for this time of year. It's freezing outside, you're kinda lazy after cooking over Christmas so you just want to make something really quick and tasty, you're trying to be healthy and lose the few extra "lbs" you've gained over the festive season and you have very little in the fridge. This COURGETTE CHIPS WITH PARMESAN… I'm not going to give you a recipe today as I don't know the exact amounts so I'll just give you a link instead which is more or less the same way we do them. I use sparkling water instead of regualr water as it makes the batter lighter. I love courgette chips, to be POLLO ALLA RICOTTA ED ERBE!! So, the coundown to Christmas has begun and how nice is this weather, it actually feels like Christmas. My partner Bruno was born here in Ireland to Italian parents, one from the south of Italy and the other from the north and where SPINACH AND BEANS WITH GARLIC AND CHILLI…. heat the olive oil in a pan and cook the onions and garlic over a low heat for about 10 mins until soft but not coloured. add your chilli and cook for 1 min. add your beans and some stock, season and leave to simmer for about 10 mins. in a dry pot cook PATE DI OLIVE NERE!! If you want to make them yourself, here is the recipe for the black olive version: 500g black olives – pitted. 25g salted capers, soaked in water for 10 mins and then drained. 4 anchovy fillets. 1 clove garlic. 125ml extra virgin olive oil. POTATO CROQUETTES WITH HAM & CHEESE! I LOVE potato croquettes, you will find them on most casual dining menus in Italy. The MIL often makes them with Gorgonzola or mozzarella for Sunday lunch and there is never enough as they are devoured instantly. There's a little bit of work involved but are a great food for kids and adults alike so ROAST VEGETABLE LASAGNE…. melt the butter in another saucepan, then add the flour & stir well. add the hot milk a little at a time, stirring constantly. cook the sauce for about 10-15 min over a low heat whisking occasionally with a balloon whisk. remove from the heat, season with salt & pepper and nutmeg & stir in the parmesan. BOLOGNESE LIKE MAMMA USED TO MAKE… I asked the question recently on facebook if anyone would like a traditional bolognese recipe from scratch as I know a lot of people use jars when making it and the response was surprising to say the least! SPICY BEAN & PANCETTA SOUP…. It’s cold, it’s wet, it’s dark, yes it’s winter time and that means only one thing – SOUP!!! We’ve been absolutely battered here this weekend so it was time to bring out the comforting soup recipes. I love minestrone soup but it does require a bit of prep with all the veg that has to be chopped which can take a while whereas this recipe is great in that it mainly involves opening a few cans of beans. Does that make it any less tasty, no Sireeeeeee, it’s absolutely delicious. I demand you try it:)_WHAT YOU NEED:_
2 carrots chopped
1 celery stick
2 garlic cloves crushed2 tsp chilli flakes
250g diced pancetta
1 400g tin cannellini beans drained 1 400g tin borlotti beans drained 1 400g tin lentils drained 1 400g tin chickpeas drained1 lt chicken stock
2 sprigs of rosemary choppedolive oil
sea salt and black pepper_WHAT TO DO:_
heat 4\5 tbsp olive oil in a pot and cook the garlic, carrots and celery over a low heat for about 10 mins until soft but not coloured. add your rosemary, chilli and pancetta and cook over a high heat for about 10 mins until pancetta starts to colour. add your beans and your stock, bring to the boil, season and reduceheat.
simmer over a low heat for about 30 mins. check the seasoning and serve with crusty bread of course:)Easy Peasy:)

AGNELLO CON PISELLI
Yo Yo Yo…..
It’s been a while hasn’t it? I’ve been a busy ladeeee with setting up the new company for our new range of fresh pasta sauces. We are closer to launch now & hope it will happen some time in November. It’s been a long process but we’ve threaded very cautiously and hopefully we have made the right decisions. I’ll do a full blog post on it again, it’s very exciting times in Casa Italian Foodies & I’m keeping everything crossed that it succeeds, as they say “nothing ventured, nothing gained”! So this summer was absolutely rubbish & I find it really hard to cook when I know I’m supposed to be eating al fresco & the bbq should be permanently on but that didn’t happen this year so I’m actually embracing winter and its comfort food. What represents winter & the cold wet nights better than a hearty stew so a simple, tasty, lamb stew is my comeback post, (I know, I know I’ve had about 10 but at least I try) I wish I could say this is my recipe but I have to give credit to the “Two Greedy Italians” for this one, I’ve made lamb stew before but I like the addition of chilli & white wine vinegar in this one so I’ll give you their recipe, I’m sure they won’tmind:)
WHAT YOU NEED:
1 kg boned shoulder cut into chunks10 tbsp olive oil
1 onion diced
1 carrot chopped
1 celery stalk
5 garlic cloves crushed20g anchovy fillets
handful of thyme
1 red chilli sliced
250ml white wine
25ml white wine vinegar250g frozen peas
300g potatoes cut into cubes 200g cherry tomatoes cut in halfflour for dusting
sea salt and black pepperWHAT TO DO:
dust the lamb chunks with flour and season well heat the olive oil in a large pot and sweat the carrots, celery, garlic and onion over a low heat until soft. add the anchovies, thyme and chilli and cook until anchovies havedissolved.
add the lamb chunks and seal well all over. stir in the wine and allow to reduce by half, then add the vinegar. reduce the heat to low, cover and simmer for 20 mins. add the peas, tomatoes and potatoes, cover again and cook for about anhour.
serve with lots of crusty bread:)meat , stews
